Hm yeah, Developers are trying to improve and improve when they can't go any further so most games work the same, I get too bored of newer gen games because its too bored and repetitive, Games like most wanted and san andreas were the shit and you could/still can spend hours playing without getting bored
Maybe some brand did not authorize EA to use this feature on its cars... :P

Continuing the ProStreet example (since it was the first NFS with such and in-depth damage model), in that you could crash McLaren F1s and Veyrons just the same as you could a Honda Civic.
Brands should just let game devs have fun with their cars.

Those tires makes actually grippier, you are right. Example of that, when you super build race version of Volkswagen Beetle it has those tires and tires made them super grippy. You should try to build beetle in race. You will love it.
