Ingredients:
2 slices of bread
2 favorite sausages
2 eggs
Butter
Salt and pepper
2 slices of cheese (e.g., cheddar, Swiss, or your choice)
Shredded mozzarella (optional)
Hot sauce (optional)
instructions:
1. Start by cutting out a square from one of the slices of bread. This will be the top piece of your sandwich. Set it aside for now.
2. Take the two sausages and cut each one in half lengthwise, creating 8 sausage halves in total.
3. Heat a skillet over medium heat and add a knob of butter to melt.
4. Place the bottom slice of bread in the skillet and let it toast for a minute or two on one side.
5. Once the bread is toasted on one side, place the sausage halves inside the square shape you cut out in the bread.
6. In a small bowl, whisk the eggs together and season with salt and pepper to taste.
7. Pour the egg mixture into the square shape with the sausages, filling it up. Be careful not to overflow.
8. Lay a slice of cheese on top of the egg mixture. If desired, sprinkle some shredded mozzarella on top for extra cheesiness.
9. Drizzle hot sauce over the cheese, adjusting the amount according to your preferred level of spiciness.
10. Carefully place the square piece of bread that you set aside earlier on top of the cheese, creating a sandwich.
11. Press down gently on the sandwich with a spatula or the back of a spoon to help everything hold together.
12. Cook the sandwich over low heat, flipping it occasionally, until both sides are golden brown and the cheese has melted. This should take about 2-3 minutes per side.
13. Once cooked, remove the sandwich from the skillet and let it cool for a minute or two before serving.
