    When I first looked at the choux paste recipe many years ago, I thought it couldn't possibly work: throw flour into BOILING WATER? But it did, and the puffs came out beautifully. I didn't pipe the paste, I used a spoon to make a rounded pile. It's the perfect dessert base for people who mustn't eat sugar, because the classic recipe doesn't call for sugar in the first place. For one of my birthdays I made cream puffs and filled most with basic cream filling with sugar, and some for me with a cream filling made with sweetener. They were wonderful and the guests devoured them.
