There is an option to turn that mini map on full time. The dingy and dive platforms do slow you down because they have weight which all adds up to the total weight on board. As already said before, handling sails are the best all round type of sail, higher level ones with speed multiplier added are the best option if you get blueprints
I am pretty sure you already know, but you can use all handling sails instead of speed sails,and go faster against the wind, since it has more wind catch radius. Then you wont be caught out at sea with 1knot of speed. You don't really need speed sails when you're against the wind, they only slow you down. So, on my boats i never use speed sails, only handling. You're doing awesome though! I love watching these vids :)
