  • My Secret Cheese Bread Soft and fluffy like cake
    Dough ingredients
    面团食材有:
    2.4cups bread flour
    高筋面粉 300g
    Less than 1/4tsp Salt
    2g 盐
    Sugar 1/4cups
    糖 45g
    Instant yeast 1tsp
    酵母 3g
    Milk 1/2cup
    牛奶 140g
    Egg 1pc
    鸡蛋一颗
    Unsalted Butter 3tbsp
    35g 无盐黄油
    …… filling ingredients ……
    Room temperature
    3/4cup Cream Cheese
    室温奶油奶酪 210g
    2tbsp sugar
    糖 30g
    1/2tsp Lemon zest
    柠檬皮屑 2g
    1tsp Lemon juice
    10g 柠檬汁
    70% of egg wash

    我照你的方法做了很好吃,裡面的起司醬爆將,所以很難做成辮子狀,不過整體來講還是非常好吃的,謝謝你的分享

      谢谢留言让我知道,下次做再爆浆的时候,可以试试把面团放进冰箱冷藏变硬一些再整形!

    請問一開始的麵團可以用廚師機打嗎?還是一定要手揉?

      可以用面包机,不过一般手揉的配方面团要比机揉的稀,使用面包机揉面请减少15g牛奶液体,或者加面粉10g

    Not sure if the sprinkle on top is ground Almond instead of parmesan cheese, as the creamcheese filling is sweet, not savoury...

      Nope. Parmesan teams up just fine with sweet fillings. Your choice is sort of odd, dear. Sorry but almond is more fitting for fruit pies and custard pies instead of cream cheese. You wouldn’t know it until you tried it.

    按照您说的方法做了奶油芝士馅料,非常的不成功,没有像您做出的那样,我的奶油会从切开的面里流出来,根本没有办法再编麻花了。不知为什么。我想是柠檬汁和蛋液把奶油芝士搞稀掉了。

      奶油奶酪室温温度高就会融化,如果很稀可以通过冷藏以后再做,柠檬汁适量减量,谢谢你!
