Ingredients:
1kg celery (chopped)
1kg carrots (small dice)
1kg bell pepper (small dice)
500g garlic (roughly chopped)
1kg white onion (small dice)
3kg ground beef
30g dried rosemary
30g dried thyme
1kg tomato paste
Oil as needed
Water as needed
Salt and pepper as needed
Sugar as needed
Patis as needed
Butter as needed
Procedure:
1. Saute garlic until lightly brown in color.
2. Add onions and cook until lightly brown in color.
3. Add ground beef. Add patis. Cook until all the liquid has evaporated and slightly brown in color
4. Add bell pepper, celery, carrots. Cook until all moisture has evaporated.
5. Add tomato paste and saute it until it sticks to the bottom of the pot.
6. Add enough water to cover, rosemary, and thyme. Simmer for 12 hours, adding water as needed and stirring occasionally so that it doesn't burn. Alternively, you can simmer it for 3 hours until all the moisture has evaporated, leave it covered on the stovetop, and continue cooking it tommorow. We found this to be the best way.
8. Don't worry about seasoning anything. Seasoning will be done before tha pasta is served. The sauce needs to be super reduced so that it doesn't take a lot of room in the freezer.
7. Before serving, thaw out your desired portion of sauce and cook your pasta 50% of the way. Add in a pot your desired portion of pasta and not too much sauce. Add pasta water and season as desired. I use fish sauce and brown sugar. Butter is also a very nice addition. Keep adding pasta water and keep on stirring until the pasta is cooked through and the sauce is at your desired consistency.
8. Plate up and garnish with parsley, and any grated mature cheese.
The thing about simmering or slow cooking spaghetti sauce is it brings out the real flavor of this dish. Slow cooking allows for the maximum extraction of flavor from the meat itself (including any collagen and/or connective tissues), along with the vegetables and spices, resulting in a more pronounced and complex flavor. This spaghetti dish, for sure, is a force to be reckoned with.😊
A lot of households dont singe their ground meat long enough, just as they change color to light brown, they immediately pour their tomato sauce.
@@rdu239 Yes I actually do this way back. I think it’s more because the instructions printed on most pasta or sauce packaging says to just cook it for a few mins and then throw in everything else then let it cook for 15-20 mins and its done. Not everyone has time I guess to do the long hours of cooking. I have tried both long and short cooking hours and the sauce that has been cooked for longer hours tasted way better.
@@ChefCsKitchen And ground meat itself has moisture, and a lot are usually afraid to go high flames cooking it out of fear that it may burn bad, it will burn if you dont stir it enough, it will steam and boil itself if you stir it constantly. Meat particles sticking is normal (unless you are using teflon pans) but it will scrape off easy once you add liquid to it like wine or canned tomatoes etc.
@@rdu239 Thats true Sir, that’s why its either you need to cook it on high flame or cook it in batches so that you dont end up steaming it.
@@rdu239 And yes all those stuff sticking at the bottom are all the concentrated flavors and can be easily incorporated into the dish by deglazing the pan. Great insights sir ☺️

I love this! Mahilig ako sa mejo maasim na spag, italian style kumbaga kaya tomato paste din gamit ko, kuha ko yung asim na gusto ko plus mas madali na adjust kung paalat or patamis pa dapat. Sa tagal ng luto at mga ingredients nito sa malamang panalong panalo lasa nito.
