Great video! I worked at a hotel and helped out with others for a couple years. One piece of advice I can give is ALWAYS stay away from hotel food..... ALWAYS. Many of them bribe/know the inspectors and get a good sanitation rating no matter what. The last kitchen I seen had 4 year old grease and a handful amount of complaints about snot rags ended up in burgers or hair or other disgusting shit.
