How does it fare with brisket? I’m pretty big in cooking brisket but it seems like I should’ve gone with the Weber Smokey mountain due to it being able to handle brisket better
I just made a brisket on the pbc for Father’s Day and it was delicious! I wasn’t sure how it would turn out at first because of how fast it cooked but it was perfect!
Ok Noah, my husband Buck, has been smoking brisket for a loooong loooong time, and is the brisket go to guy. He watched this video and was impressed. He said that you finished with a Texas crutch which cut cooking time way down, and helped the meat thru the stall. His comment was "what the hell" might as well try it, maybe somebody else is smarter than me! Will let you know how it comes out, when he does one on the PBC that I just bought him.
how in the world does the bottom not get so dry next to those coals? and it seems that barrel has trouble getting good ventilation? does it get that white dirty smoke alot? thanks.
I have a few briskets on my pit barrel and have came out great. ..I was wondering if I can get one to fit on the grill without touching the walls of the barrel wouldn't that be ideal? or if anyone has hung one tip side down before just a thought

Just got my pbc today and I watched this video before going to the store. I found a 15lb brisket but when I got home I realized it was too long to fit in my PBC. What can I do to fit the meat? Should I cut it in half?
I know this is an older comment but the bottom of the cooker runs hotter on the side with the vent on it. I hang my brisket on far back opposite the vent side with the fat side facing the vent (the hot side). Keeps the end of the flat from drying out amd helps the fat render better. Give it a try next time.
Try and get a brisket that ends up being about 10-12lbs after trim. Get more that size if you require more meat. Any bigger, you'll bottom out in the grill.
Smoked a brisket flat on my PBC tonight, just as described here. Delicious. My wife said "I should have gotten you a smoker 20 years ago."

The heat envelops the whole brisket, plus the juices keep the bottom from getting dry. Hope that helps

No you wouldn't need to add more charcoal. It will still be plenty hot after 6 hrs

Any wood added for smoking? If not, do you still get much of a smoke ring or smoke flavour from just the charcoal?
You certainly can add wood and it adds flavor. But the charcoal does give a smoke ring and it's own smoke flavor.

Trim up the bottom so it doesnt hang past the middle of the barrel

How long does it take to cook a 7 lb brisket using the same method?
General rule of thumb is 1-1.25 hrs/lb, but also keeping an eye on the 165 and 200 degree mark.

Haven’t been able to figure out how to cook it without the flat being unedible unless using it as chili later
But everything else I have cooked on it has been simple and excellent
