Craig, Thanks for this, I got my PBC 4 cooks ago. Having a good time. 2 things , I catch the burned up ash on a large sheet of aluminum foil, after all is cooled, I just get the 4 corners into the center and lift and dispose of it.. Second, I understand that the PBC testing was all done around Kingsford charcoal. I can get Kingsford briquettes 16 lb bag for about $15.00 B7B is it about same on price? What advantage are the B&B coals, Thanks..

I have an offset, but honestly, I never use it anymore. It's the Pit Barrel, or the Weber Summit Kamado that gets most of the work! Thanks for watching and commenting!
BBQ iT the diameter of basket is 14 inches but how high is it? 4 inches or more? Thank you, I love your videos. Here is too difficult to find Pit barrel and a want try to build a similar one
If you have a Kamado Big Joe, you've got all you need. The main difference you'll notice between the KJ and the PBC is that the bark will set sooner in a PBC than the KJ. The reason is due to the heat signatures between the two cookers. The PBC is high convection/low radiant heat, the KJ is high radiant heat/low convection. I think the flavor profiles are so close, you won't notice the difference that much.
Instead of stuffing foil in the holes use those flat flexible sheet magnets that come on phone books and various junk mail just cut them to fit and when you don't need to use them slide them to the side and carry on

Great video, I've got five smokers including this one and like you mentioned putting foil in the vents to regulate temps. An absolute necessity.

Does it make sense to get a PBC when I have a Kamado Big Joe and a Traeger Timberline 1300 pellet grill?. Could PBC be better than those?. Thanks

Why doesn’t it have a thermometer?
You don't really need one. PBC runs reliably in the 250-300 degree range, as long as you sent the vent as per the directions.
