Regarding the fermented shrimp paste in the pinakbet. They can be added. But usually is cooked only with fish sauce. I like both versions though. With and without shrimp paste.
Yes Pinakbet is a mixed vegetable dish (okra (lady finger), squash, string beans, bitter melon, egg plant) sauted with fermented shrimp/fish paste. I just think, Caldereta doesn't go well with Pinakbet since Pinakbet is usually paired with fried pork or fish. Caldereta is a stand alone viand paired with rice. Longganisa is a breakfast viand paired with garlic rice and eggs. I hope this helps. I'm a Filipino so i should know. Haha... Love you always Vannie

Also i noticed that your views dropped a bit. It's probably because you've been away for a while (Filipino food) i mean. Haha....
