I always thought she was a great protagonist. She's a character a lot of children, regardless of gender or anything, can relate to. Might sound weird, but I think she nails androgyny and it works to her advantage as a protag.
Since you agree, I'll expand... She kind of reminded me of the androgyny of SpongeBob, as ridiculous as that sounds. Something girls and boys can relate to, without making androgyny their entire selling point. They're entire characters (and therefore people) of their own.
Characters like Luz are usually supporting characters in most fiction (like Marcy in Amphibia for example). Having an eccentric nerd with an energetic personality in the role of protagonist is one of the many reasons why I love TOH. She is also more relatable than the usual boring blank-slate/everyman lead in most things.
Marcy is my favorite Amphibia character and when watching the show I often thought, “Man, I really like Anne and the Plantars a lot, but I kind of wish that Marcy was the lead because she’s so likable and entertaining.” Then I realized that Luz being the lead in TOH makes up for it.

I genuanly love Luz. She's probably kne of my favourite protagonist of any series i've watched. Luz is a very simple yet complex character, she is relatable in many ways and is quite different from the "cool main character gotta be cool, yeah" kind of thing. She's for one my favourite character in the series, for 2 she's a kin of mine so- Yeah, Luz really was a breath of fresh air from past protagonists in shows i had watched before TOH.
I don't think I've ever saw character like Luz as a protagonist before and wearing mostly pants with beanies, etc..her daily fashion choice is also very similar to mine I'm very shocked. I'm also a nerd especially for animations so first time seeing her on screen was weird in a good way. Some people who doesn't know Owl House sometimes look at my profile pic on different social media platform and say she kinda look/feels like me. I've never relate to this character more than ever before. (Also kinda made me realize I'm bi)
