For those who ask about the long time preservation, if u fill up your jars right away it finished cooking, close it tight and put it upside down for 11/24 hrs, will vaccuum seal perfectly, but if u want to water bath go ahead n do it for 15-20 minutes.

One of the most soul soothing activities I have ever experienced is sharing this kind of thing with a loved one. Oh, it's a powerful date night, rest assured. Best of all for me, is including a sweet child from age 1 and up. If they want help in any way, you can accomodate them. Even the youngest can sit nearby in a highchair and feel involved by mashing applesauce, etc. My granddaughter enjoyed standing in a chair and making her own scrambled eggs since about 18 months old. She feels like a champ and is so smart, she was learning and tuning her skills in a very real way. The joy and love in her face is priceless! Watching her as she sees food magically transform as we cook is building her brain network to treasure discovery, teamwork and kitchen chemistry. How can you top that?! Conclusion: Consider suggesting these things to those who receive your food gifts. Suggest that they choose to discover any food they can make together. The younger people like immediate rewards, like we do, but cheese, bread, and other multi phase projects work too, with practice. Enjoy!

Do you have a strawberry jam video? I got all the tools and ingredients, I went to the Ball site and they have a pectin calculator there. Basically I am looking at the ratio of pectin to the amount of cups of fruit. They should be the same no matter the fruit right? could be wrong that's why I am asking. Also, the ball calculator does not indicate the amount of lemon juice. Actually it doesnt list it at all. So if I was to go by what they say there would be no lemon juice in the jam at all. I am wanting to store it so I am assuming it is essential to be in the jam,?Thx again
Hey Joe! I don't actually use pectin in my recipes, but from what I recall from culinary school, your instinct is correct: the amount of pectin required should be about the same no matter what the fruit is. As for the lemon juice, their recipe just may not include it. You don't have to either! It's not essential for the storing of the jam :)

Salt brings out the dominant flavor in whatever you're making! That's why when you bake a cake or muffins or anything like that, there is usually 1/4-1/2 tsp salt in the recipe. And that's also why chocolate with fleur de sel is so popular - it makes the chocolate flavor pop :) Learned that in culinary school and it's one of my favorite tricks!
