Ikkousha have a branch in my hometown, Sao Paulo in Brazil. I was wondering why my bowl of ramen was a little foamy, at the time I thought that this was some sort of imperfection but turns out that this is a signature of the soup from this shop, I just learned that watching this video, thanks!
After watching a load of these videos, I think I have managed to work out the Japanese culinary philosophy. Basically you start with an insane amount of food in the biggest saucepan you can find, and then keep moving the food to gradually smaller pots until you serve it, lol.

I just watched a video of Michelin-starred ramen restaurant in Seoul where they used a blender to create the foam. It just seemed so unnatural and off-putting to me. This one makes complete sense 👍
wonder how many boiled eggs have to be pealed each day - my limit is a dozen when I make either egg salad or devilled eggs OR large bowl of potato salad for family picnics / bbq 😂🤣 thanks for taking us along with you on another wonderful adventure 🙏

I'm learning to make Ramen noodles from scratch, so I had to look into your question.. I don't use a lot of salt in my noodles because my soups are flavoured how i like. Now I see lacking miso ond or soya sauce, salt becomes a main flavour and I guess he is a perfectionist lol.. fascinating stuff!
"There are three main kinds of tare(seasoning sauce): miso; shoyu, or soy sauce; and shio, or salt. If the predominant flavor in the tare is soy sauce, it’s a shoyu ramen; if it’s miso, it’s a miso ramen. Shio ramen, on the other hand, is defined primarily by what it’s not: If it doesn’t taste like either miso or soy sauce, it’s most likely a shio ramen.
Saltiness isn’t its distinguishing feature, since all ramen is quite salty. Rather, a shio ramen is one in which the main contributor of salinity to the flavor base is salt-not miso or soy sauce. Beyond that, almost anything goes."

魁龍と共に豚骨ラーメンで柔麺をおすすめしてくる珍しいお店の一つです
大名の頃から通っていますが、今の博多本店の王道豚骨ラーメンはとても素晴らしいです
ラーメン屋さんは人それぞれ好きなお店があって好みがあると思うけど、一幸舎だけは県外の知人を連れて行ってハズレがない。王道中の王道だと思う。

This ramen doesn't look too tasty. Plus ramen chef makes too much noise. I like a ramen with clear soy sauce flavor and for toppings to be chopped green onions, pickled baboo shoot, slices of chasiu pork and slice of fish cake. All the other new ramen, forget it.
