Chef Corso, let me preface my comment by saying that your channel is wonderful and that it has renewed my enthusiam for trail cooking and expanded what I think is possible while hiking! So please don't think of this comment as a criticism - I think of it more as a way of appealing to a new segment of viewers. I'm 54 and have mild high blood pressure, like many of your viewers over 50. This dish looks declicious and I plan to try some version of it, but... by my calculations this single dish has more sodium than the entire recommended daily allowance. The instant mashed have 2,000 mg before you've added bacon - gasp - cheese, and Franks red hot, so the final result is in the sodium stratosphere for us older folks. I figure I can adjust your recipe with regular dried potatoes, powdered milk, and the rest of the ingredients, but may I suggest that a low-sodium version of some recipes is always welcome? Again, your channel has opened up a world of trail possibilities - thank you!

    • @ChefCorso

thanks for the thoughts D. I hear ya. This is up there in sodium, but some folks may be drawn to that. We have plenty of "healthier" recipe options for ya!

These name brand potato flakes are terrible from a health perspective, buy the generic boxed and dump them into a baggie for your pack.
After that I encourage you to do your own research, it's not the salt it's the sugar to look out for.

Average daily sodium is for someone sitting on a couch. A strenuous hike, especially in warm weather blows that recommended sodium advise. For someone who does not have high blood pressure, this recipient is almost perfect. Im 59. Thanks again for another great idea Corso.

New Subscriber. I "Like" & rang the notification bell.
My own pre-cooked bacon is something I carry in a pouch & munch on during the day - anytime, anyplace, with or without anything.
I've often prepared Idahoan Instant Potatoes as a meal - I always add some chunks of my pre-cooked bacon. Never thought of fresh green onions, something I'm going to be adding to most any & all Freeze-Dried meal from now on.
I do add a couple of shots of Tabasco Sauce to most any Freeze-Dried meal for flavoring - &, of course, Bacon.
    Warm Regards from Reno, Nevada

I tried doing an elevated mash potato bowl. I used powdered milk, part of a powdered gravy packet, celery, onion, a chicken packet, and dried cranberries. It could still use some tweaking, but as close as I could get to thanksgiving on the trail.

I love doing things like this. After the bacon is warm, I will normally add the whites of the green onion and a clove of garlic to the pot for a minute before adding the water. It adds so much flavor to the final dish.
Sautéing the whites of the onion with garlic and ginger is a great way to start most asian flavored dishes as well. I even toss in some peanuts to stir fry a bit on Thai meals. Minor amounts of cooking lead to outsized flavors in the final dish.

I don't do camping and don't know why this was recommended. But a tip to cover your protein requirements for the day is just add a tablespoon/15g of plain collagen to a meal or starch. It's basically a complete protein missing only tryptophan, and has an amazing amino acid profile. Dissolves hot or cold. Can premix into oatmeal or instant potatoes and so on. Doesn't change the texture or taste of the food unlike whey or protein powders and is very easy on the digestive system.

A problem with a lot of freeze dried or dehydrated herbs is people use them wrong. Take the chives, soak them in water to hydrate them and then use them. Don't just throw them into your food. Same with garlic powder. Garlic powder is 300% better if you hydrate it before using it. Btw, I completely agree on spring onions, I use them all the time on trail. And broccoli will stay nice for 5 days too. I even take cherry tomatoes. But I am on my 11th Thru-hike, I am sick of hiker food, so I don't mind carrying a bit extra weight for decent food.

Dehydrated green onions from Walmart, real bacon bits from Costco, dehydrated vegetable mix and dehydrated peas, saves space in cooler if car camping, saves weight if backpacking and just takes very little time to rehydrate. I even bring Anthony’s dehydrated butter, is real butter and can’t taste the difference, Anthony’s also has dehydrated cheddar cheese, it won’t melt but is real cheese and adds taste. Love your recipes so much I’m saving your videos.

Some good ideas although I would use an anodized aluminum pot to prevent scorching. I realize that anodized aluminum pots don’t come smaller than 1L, but I only do day hikes where weight isn’t a big issue for me. Unfortunately I have high blood pressure and that IS a big issue for me. My doctor said to limit my sodium intake to under 1500mg a day so this recipe wouldn’t work for me.
