    I recently received a (German made) Messerschmidt flaker accessory for my KitchenAid mixer. It operates a little differently in that it uses one serrated roller and pushes it against a smooth anvil. Accomplishes the same thing and I love the results. Flaked rice makes wonderful cream of rice cereal. Adding some flaked flax seeds breaks them open and releases the oils inside making them much more digestible.

    I just picked up a new Eschenfelder flaker, and while I do not have oat groats on hand, I have several other grains I am testing it with - rye, einkorn, buckwheat, etc… I have been grinding my own flour for several years now, and am excited for this new way to get whole fresh grains!

    You just need to find raw oat groats to get the enzymes in tact. Those can be tricky to find. And you have to take care to make sure there are no bugs when you do. I buy from Brian Severson Farms in Illinois. I put them in the freezer for 30 days to make sure no bugs. Sandstrom Farms in Az also has raw groats. Both will be sproutable as well :)

    What about the fact that they tell you you need to soak the oats or soak the grain in in order to get rid of the anti-nutrients in them? If we flake them or grind our own flour or oats, are we not grinding up the anti-nutrient with it. Since the anti-nutrient is in the fiber, and we need that fiber? we would have to soak the grain first and then dehydrated and then cook it and we would be ruining some of the nutrients in the dehydration process. So it wouldn’t be fresh. These are all questions that go around and around in my head.

    Hi Annette. I was looking at the oat groats from Azure Standard, which you recommend on your list of where to buy grains. They state that their oats are "sized, toasted, and steamed to deactivate enzymes." Are these the same enzymes you were speaking of in your video? Should we use a different source?     1) Are Oat berries also known as steel cut oats?
    2) Do freshly milled grains have phytic acid? Should we still soak the grains or roast them to rid the phytic acid?

    My properly stored, but older (12 year) oat groats had kind of a "musty" smell, like and old book. Prior to flaking, I toasted the groats on a sheet pan at 350 degrees for 15 minutes. The results had a pleasant nutty aroma that carried through into the oatmeal. The texture of the flaked product was also "lighter" and more broken up rather than just a single flattened grain. Next time, I think I will try toasting the oats after they have been flaked and see what happens. The toasted flavor is pleasing enough that I find I can use less sweetener to make an appetizing meal.

    Is a flanker the same as a grain mill? I have grain mill and didn’t know if there is a specific setting to the nobs that would flake the oats?

    I have seen many people saying that oat groats, oat flakes and other grains contain lectin… and that they should be soaked before using them. What do you do?
    If I flake the oat groats, then soak the flakes in water with 1 tsp of apple vinegar, then the next day rince and drain… what do I do next to keep the oat flakes for several days? Dehydrate them then jeep them in a sealed jar? I would like to have some on hand to make granola, oat milk, etc. Thank you.

      Lectins are sort of a controversial topic in most nutritional spaces. Keep in mind the vast majority of lectins are deactivated when they’re exposed to air and heat. Soaking can also help if you are especially sensitive but it’s probably not necessary for most people.

    Ijust ordered one..I need to find a real good recipe for overnight oats as well..I had some organic oats I had for my almond cow and hoping to use these in it as I already have some guess they are oat grouts/..help what do you suggest?..Patricia..I am also gonna try and start milling flour..I have a mill I have really never used but I do not eat alot of bread as it effects my body

      Look for organic oat groats that have been hulled.. Sold by many of the companies that sell whole wheat and other grains.

    Hi Anette! Could I roll the grains in ahead of time instead of rolling them every day? you know, morning time is quite limited. I know that as for freshly milled flour is best to use it right away. so what about the rolled grains?

    I just received the flaker from you today. I tried it out on some wheat I had. It did not flake them but course ground them instead. Is there an adjustment setting for the flaker?

      Just got a reply from Mockmill tech support. You have to hydrate grains before flaking them. (No where in the manual) "There are two methods for hydrating: Place your grain in a plastic bag, sprinkle with water so that some gets on all the grain, close the bag and let sit overnight. Or put the amount of grain you want to mill into a small bowl, set into a covered saucepan with 1/2" of water. Steam for 1 - 2 minutes. Let cool, and mill."
