What these people are doing is so practiced, dextrous, efficient and precise that to someone as primitive in the kitchen as me it appears to be magic. I'm a little in awe.
Haven't done this, but I have worked in a kitchen before, and after a while it just becomes as automatic as breathing. For a month or so you have to think about what you're doing, after that your body just does it without you thinking about it and you just get faster and faster.

The smell of onions cooking brings in way more customers than any advertisements ever could. Even people that don't even like onions love the smell of them carmalizing on a grill.
I live in Chicago and love this food. This is right off the expressway, a good location. It is like this all the time cause they never close, I have been there at least 15 times, day, night, summer and winter, they are always open . A great place to grab a hot meal for a any meal, their polishes are the best, cooked just right juicy and fresh. Never had a bad meal from here, never.

I remember my parents driving from 115th Street south to get us Polishes . What a treat. I still love these today. I'm 64. Been eating them since 5 years old. Background music ,Do it any way ya want to do it.Chicago born and raised.
Jim's Original... Man when I used to work at the United Center, there was a stretch in the winter where me and my co-workers would hit that place up after every game we worked. Since they were open 24/7 we could even go after late games when we got off at 12am. We just got our orders, then ate in the car and talked because it was too damn cold to eat outside. Always got the same order every time. Bone-in Porkchop, Polish Sausage, and a Fish Sandwich. Always ate the extra fries the next day. Good times. If you live in Chicago and haven't gone here, you're missing out.

I used to swing by there as an OTR driver when I got empty out of Jewels distribution center in Melrose Park. My normal reload was downstate in Urbana so I'd take the Ryan to 57. I ate many a polish sausage from this place normally getting 5 to go.
Deeelicious !!! It's amazing the way they look so greasy, but by the time you get them, they're not greasy at all. All the grease went to coat the onions with flavor, so they're not greasy either. Great system. I cant believe they can constantly make so much food and it never backs up. They do so much business ! I hope these guys are getting paid well. They do a hell of a job, making this great food, keeping so many people happy and keeping the owner making plenty of money. They should be appropriately rewarded. They're awesome !

my biggest complaint is soaking the bread in mustard instead of putting it directly on the sausage. I love mustard and i feel like the bread would soak up to much of the mustard to really taste it. otherwise looks fantastic! definitely gonna be a place i visit if i'm ever in Chicago.

I remember my dad used to take me down to Halsted & Maxwell (the original Maxwells Street Polish) back in 92' the sausages with fries and can soda was $2.50 , now my dad is gone RIP , and here we are in 2023 and the original has been replaced with the UIC college stores, and Maxwell has been renamed to Jims Originals with plenty more locations and the same sandwiches cost about $7.00 😅 but I still love them❤❤❤❤ I'll have a pork chop with no cheese and extra hot peppers for you POPS 🥹😞❤
I was raised on Maxwell St. Polishes. You can smell those onions from the interstate. Those sausages may look plain but they pack a garlicky buttery spicy flavor like no other. You should see this place at 3am on a Saturday when the bars and clubs let out. Best grease in town to soak up the liquor.
So my Mom was from Poland and I grew up eating Kielbasa but secretly hating it. Just doesn't do it for me. But ... when I was ordering Vienna Beef natural casing Hot Dogs as a Father's Day present, I threw on their Polish Sausages, thinking my Dad would like them even though I don't. Whoah, best fucking hot dog I have ever had..amazing. I honestly think I could make bank selling them like this in my neck of the woods. This place is obviously busy.

Love this place. Had to drop a part off to a technician in Chicago last week and drove 25 minutes out of my way for the original Maxwell. Absolutely delicious!
I love watching masters at work. These guys are masters at what they do. Griddling and building sandwiches are basic skills, but to do what they are doing consistently at this speed takes high dexterity and attentiveness. As someone who has worked every job there is in restaurants, I recoiled at the news that restaurant workers would have to be paid a minimum of $20/hour. Most fast food workers simply aren't worth it; that's why so many restaurants have closed. As a manager and owner, I took the time to interview and train people who I thought were worth more than the fast food chains typically paid. I would increase their pay according to their hard work and contributions to the business. The way I see it, if you're not worth more than minimum wage, keeping you around is stealing a job from someone who is. The workers in this video would definitely be some of the highest paid workers in my own restaurant -- definitely over $20/hour. People who make this kind of effort to keep a business -- and their jobs -- going deserve to be rewarded.
I just find it amazing that this is considered "Low skill" work by many americans, and that people would scoff at the idea that those who work these sort of positions dont deserve to be well paid and taken care of. This is absolutely amazing to see and they are true craftsman on the grill and fryers.
Well said. And even if they weren't great the grill, it's still hard work. They're working while standing in a hot kitchen. I hate doing that for more than 30 minutes in my own kitchen. I can't imagine doing that for an 8 hour shift or longer.

Honestly when I compare a job like this compared to let's say a lawyer there's not much difference. At the end of the day you're providing a service to the people.
When I was working construction in Chicago I'd always stop here if I was driving by at lunch time... so good. And I think of this as the "new" Jim's, I remember the old one on Maxwell Street before UIC acquired all the land and that was the end of the Maxwell Street Market. But the Maxwell Street Polish lives on!

This is also a Chicago favorite that doesn't get the kudos it deserves. A "Polish" with grilled onions and a Maxwell Street "pork chop" sandwich. The BEST city in the country for foodies! The best.
I grew up in The Chicago area many years ago. The flavor of the meats are like no where else, awesome! Nothing better than a good greasy sausage or burger smothered in grilled onions. My departed granny used to say "If it weren't for grease, everything would taste like shit"! She was right! Ha Ha, that's why they make Lipitor............. Great video!

I lived in the city from 94 to 2000 and when the bars would close I would go there if that’s what you see every fabric of society now I just go there at lunchtime at least once a week when I do my deliveries
I love it to the point, no crazy add-ons or custom orders like other places. You have great meat sandwiches and most importantly ONIONS, I eat them on everything.
Went to college at UIC and my girlfriend had her dorm in JST the building literally right next to it. Ate there couple times a week. Jim's always hit the spot
My dad used to take me to Maxwell St back in the day in the 1970s. I remember eating at Jims when it was on the corner of Halsted and Maxwell St. i remember all the yelling, and all the grilled onions on everything. They serve a good polish char dog and burger, both smothered in grilled onions. The bums used to keep warm with garbage can fires from Jims garbage cans. I can see they moved to a better neighborhood now. 😆😆🇺🇸🇺🇸
When I was in High School I worked at a small place with 2 windows and no seating. We made mexican food and were known for our tacos. It was called Tacos-In-A-Tub. No preformed shells. You started with a stack of shells, meat and aluminum hair clips to keep the tacos closed while in the fryer. Lunch time and on Friday or Saturday nights after football games looked just like that. I almost walked out my first night, but my friend helped me and talked me into staying. I learned and got fast. After this I think I'm making Pork Chops this weekend!

Nobody understands how much I LOVE onions. I mean NOBODY. These guys just might be able to fill that onion void in my stomach. If I ever go to Chicago, this is the absolute first place I must go.
They use to stay open 24hrs, but The university made them shut down between the hours of 2am-6am. It’s a favorite hot spot for late night party goers.

Oh, man! There is nothing like walking down Union on a chilly Fall afternoon into that warm cloud of heavenly grilled onion scent. Excuse me... There's a porkchop sammich piled high with onions and sport peppers calling out my name.
I remember my dad used to take me down to Halsted & Maxwell (the original Maxwells Street Polish) back in 92' the sausages with fries and can soda was $2.50 , now my dad is gone RIP , and here we are in 2023 and the original has been replaced with the UIC college stores, and Maxwell has been renamed to Jims Originals with plenty more locations and the same sandwiches cost about $7.00 😅 but I still love them❤❤❤❤ I'll have a pork chop with no cheese and extra hot peppers for you POPS 🥹😞❤
I was raised on Maxwell St. Polishes. You can smell those onions from the interstate. Those sausages may look plain but they pack a garlicky buttery spicy flavor like no other. You should see this place at 3am on a Saturday when the bars and clubs let out. Best grease in town to soak up the liquor.

So my Mom was from Poland and I grew up eating Kielbasa but secretly hating it. Just doesn't do it for me. But ... when I was ordering Vienna Beef natural casing Hot Dogs as a Father's Day present, I threw on their Polish Sausages, thinking my Dad would like them even though I don't. Whoah, best fucking hot dog I have ever had..amazing. I honestly think I could make bank selling them like this in my neck of the woods. This place is obviously busy.
The University is the Landlord and has told Jim's to Close early No More Late Nights. They sell 1200 in just Polish per day.

I love watching masters at work. These guys are masters at what they do. Griddling and building sandwiches are basic skills, but to do what they are doing consistently at this speed takes high dexterity and attentiveness. As someone who has worked every job there is in restaurants, I recoiled at the news that restaurant workers would have to be paid a minimum of $20/hour. Most fast food workers simply aren't worth it; that's why so many restaurants have closed. As a manager and owner, I took the time to interview and train people who I thought were worth more than the fast food chains typically paid. I would increase their pay according to their hard work and contributions to the business. The way I see it, if you're not worth more than minimum wage, keeping you around is stealing a job from someone who is. The workers in this video would definitely be some of the highest paid workers in my own restaurant -- definitely over $20/hour. People who make this kind of effort to keep a business -- and their jobs -- going deserve to be rewarded.
I just find it amazing that this is considered "Low skill" work by many americans, and that people would scoff at the idea that those who work these sort of positions dont deserve to be well paid and taken care of. This is absolutely amazing to see and they are true craftsman on the grill and fryers.
Well said. And even if they weren't great the grill, it's still hard work. They're working while standing in a hot kitchen. I hate doing that for more than 30 minutes in my own kitchen. I can't imagine doing that for an 8 hour shift or longer.

Honestly when I compare a job like this compared to let's say a lawyer there's not much difference. At the end of the day you're providing a service to the people.
When I was working construction in Chicago I'd always stop here if I was driving by at lunch time... so good. And I think of this as the "new" Jim's, I remember the old one on Maxwell Street before UIC acquired all the land and that was the end of the Maxwell Street Market. But the Maxwell Street Polish lives on!

I grew up in The Chicago area many years ago. The flavor of the meats are like no where else, awesome! Nothing better than a good greasy sausage or burger smothered in grilled onions. My departed granny used to say "If it weren't for grease, everything would taste like shit"! She was right! Ha Ha, that's why they make Lipitor............. Great video!

My dad used to take me to Maxwell St back in the day in the 1970s. I remember eating at Jims when it was on the corner of Halsted and Maxwell St. i remember all the yelling, and all the grilled onions on everything. They serve a good polish char dog and burger, both smothered in grilled onions. The bums used to keep warm with garbage can fires from Jims garbage cans. I can see they moved to a better neighborhood now. 😆😆🇺🇸🇺🇸

How much was it ?
When I was in High School I worked at a small place with 2 windows and no seating. We made mexican food and were known for our tacos. It was called Tacos-In-A-Tub. No preformed shells. You started with a stack of shells, meat and aluminum hair clips to keep the tacos closed while in the fryer. Lunch time and on Friday or Saturday nights after football games looked just like that. I almost walked out my first night, but my friend helped me and talked me into staying. I learned and got fast. After this I think I'm making Pork Chops this weekend!

I just love how the onions compliment every sandwich you get I also love how fast and dedicated they are to make sure they get your food made tasty been enjoying since a kid use to go get this as young as 8 on halsted and boy was it packed esp on the weekends just goes to show from the until now they still make the best sandwiches in chicago with dedication
