Cut into strips if you want that "real lab equipment" look. I remember doing this in second grade and I feel kind of sad people don't know about this.
i know right? i was making a red cabbage cheesy pasta, and I used some of the cabbage water to make the white sauce and it turned blue, I then added cheese and it went purple immediately.

nah i totally agree, besides Food is wonderful that way, dont be discouraged with experimenting with the recipe, try different things until you're happy with the outcome. i personally intend to add a sea salt caramel swirl in the center, wont change the look but will add more of a sweet and salty bite that would be worthy of the kids' obsession in Twilight Town.
Fun fact: if you use regular milk and food dye, it took me EXACTLY 13 drops of blue food dye to give it the signature sea salt ice cream color. I am not joking, it really took exactly that many 😋

@@UltimateGamerCC I feel like there's only so much pigment that can be extracted from the cabbage and the longer you cook it, the more you run the risk of the flavor tasting cabbage-y. The reason the ice cream turns blue is because red cabbage has a pigment that's a ph indicator. That's why you need to add baking soda. When a mixture is acidic it turns magenta. "Butterfly pea flower extract" comes from the butterfly pea flower, which has the same pigment and it can be used in the same way as the cabbage. You can buy it online and the color is much more concentrated than just simmering red cabbage in the ice cream base. You don't even need to simmer it. Just mix in as much as you need and adjust the color with baking soda like in the video.

You know if you want it to be blue without the cabbage, there's a type of tea flower you can use instead that makes a really strong blue color! I know Threadbanger uses it, sorry I don't remember what they're called

When you're mixing the egg whites and sugar, make sure that the bowl is spotless. This is very important because any, and I man any, amount of impurities in the bowl will cause the egg whites not to fluff up properly.
This is the first time I have seen the recipe done this way, and honestly to me it's the coolest! Thumbs up on the all natural coloring, thats so smart! And the idea of putting the sea salt on top rather than mixing it in is clever and cool for display! Thank you so much!
