I made this last night and it's even better today. IDK there's something about sitting in the fridge overnight that makes some stuff taste better. Although, the next time instead of using salt I will use my Morton's seasoning blend. I tried it with it today and it really complements it.

Former restaurant cook here: all soups but especially chowder improve with what we called 'curing'. We would make 5 gallons batches a few times a week, never for service until the next day. One way to get this on demand is to make your chowder base (sauted veggies, potatoes and clam juice) ahead of time, even freeze it, thaw and add it to the cream base and heat the clams through. Assemble in the morning and serve for dinner.

I had the best clam chowder while on Cape Cod, since then I could never find clam chowder that even came close. After years and years of trying to find chowder everywhere that I had an opportunity and I could never find one that was "Cape Cod" good until now. The wife and I use this recipe to create the most wonderful clam Chowder i've had in decades. We absolutely love this recipe and it's really easy to make. Thank you so much for sharing this with us!.

This is Easter Sunday 2021. I just made this for our dinner today and it was absolutely DELICIOUS! I had never made clam chowder before and this was an easy base recipe. Like all cooks, you tweak it to make it your own. My spouse loved it so much, as did I. I will be making it again. Thank you so much for a delicious meal. xo

Yum! The only thing I would do differently (just because it's me) is to fry up about 3 strips worth of cut-up bacon. I would then sautee the onions and celery with the bacon and some olive oil. Carrots; why not? The red wine vinegar touch sounds delightful. I didn't experience clam chowder until I went to college and it was served occasionally in the dorm cafeteria. Loved it! Stayed in Seattle for 5 days on business a number of years ago, and the hotel I stayed in had great clam chowder in their restaurant. I had a bowl of chowder with breakfast, lunch, and dinner. Did I mention I love clam chowder? Will give this recipe a try. Thanks for the video!

To each their own. I grew up in NE and the only only thing we used bacon for was breakfast and bacon-based dishes. We sauteed any chowder veggies in butter and clam juice.

I'd drop the carrots, sauté the onions and celery, and add chopped parsley at the end. I'd also add a half tea-spoon of old bay.

The video should say this, I have heard it is a good idea to cook the rue alittle to get rid of the floury taste of the flour. My Mom taught me to do that when I made rue. Not too much, because it will start to become
      brown.

What's wrong with using canned clams? I'm not sure how fresh people expect their food to be, appreciate the convenience that we have people, I feel like people will soon expect you to churn your own butter. Kudos to those that can make it all fresh but honestly ain't nobody got time for that while working full time.

This is a good recipe I made it last night. I had to add more cream because it was too thick so adjust according to thickness you prefer. I cooked 4 pieces of bacon and cooked my veggies in the grease and then added the clam juice like the video says. Also crumbled bacon in chowder. As far as the red wine vinegar I didn’t notice the flavor in the chowder so it’s hard to tell if it made a difference. I would use this again.

"Why strain clams from juice?" Well, it's certainly up to the cook but for a more traditional taste and consistency I think it matters a lot. If there is a lower quality & watery canned clam liquid added to the chowder at the end it'll make it too soupy requiring more tasteless raw flour, more seasonings and/or additional cooking time to thicken it back up which makes the clams rubbery. Adding the strained canned clam liquid at the start allows it to mingle better with the other flavors.

Red wine vinegar??? I think I'd prefer a splash of sherry or something. What's the reason for the red wine vinegar? Seems totally "off" for the mild flavors of the rest of the dish.

Great question, BeaDaNurse. The red wine vinegar gives an extra snap to the rest of the chowder flavors to set them off. It appears to be a traditional ingredient in New England-style chow-dahs. Amounts vary from 2 tablespoons to 1/4 cup. Let us know what you think if you try the recipe.

@Allrecipes is right Miss Bea! The sharp acidity of the red wine vinegar will balance out the very rich flavor of the potatoes and half and half. Acidity also helps bring out the flavor of fish in general. =]
