So happy sir Roland for introducing our native cuisine,,,, National ulam ng pilipinas ang Adobo,,,❤❤❤,thank you from HK,,I learned my dishes to you sir,,, 😁😁😁 thank u,,, Happy mid Autumn festival from our family to yours sir🎉
So honoured for our famous dish adobo to be feautured or your channel Sir...😊 I always watch your videos everytime my employer want me to cook new recipe for them... We love all your recipes! And congrats for 1M subscribers Sir on your channel...❤🎉
I appreciate that you featured our all time favorite Filipino adobo. I would still recommend our cane vinegar or coco vinegar for a more authentic Pinoy taste and marinate overnight for a more flavorful dish. More crushed garlic would also add in more flavor. We would also add in the onion at the end of cooking so it is half cooked, add in a few pepper corns and green sili for a slightly spicy flavor and aroma.
THANK YOU THANK YOU to both of you! I have made this dish a few times and it would come out good enough to let me know that I was on the right track, but I could tell that I wasn't quite there yet. Now with your recipe and techniques (+ the tips included in this comment) this dish has reached new heights for me!! I made it tonight and I am surely using this same recipe from now on! With cane vinegar and extra garlic 😊
Im a fan happy to watch all your recipe i learned alot from you since i work singapore need to follow chinese style cooking happy that you do adobo its very nice proud filipino here 🇵🇭 happy 1M 🥰 congrats❤🎉

@@spicenpans Thanks too Sir! Always looking forward to your videos. I love all the recipes you feature. Its simple yet so delicious Keep it up Sir Roland!
I made this today and really enjoyed it! I was only cooking for me (just three drumsticks) so had to reduce the ingredients etc to a third, though I think next time i'll need a little more water - half instead of a third as it had reduced nicely by the time the initial 20 minute cooking time had done, and I had planned to put the rice on so it would cook and be ready while the sauce was reducing. Either that or I put the rice on when I start cooking it so 20 minutes will be enough. Definitely one I'll be cooking again. Thanks Roland!
Gud pm. Thats tagalog abobo with sugar. In visayas its usually a mix of only vinegar and soy sauce and the usual spices. Try it with out sugar. Just balance the mix of vinegar and soy sauce.
The authentic Filipino chicken adobo just Filipino special soy sauce the brand is silver swan or datu puti and then white vinegar we don't use oyster sauce.. but l guess ur version of chicken adobo is still very tasty 🙏❤
Yum! But I don’t know if this recipe will interest anyone else other than you. Let me try making it first and see the results. Thank you so much for your request, Charlie ☺️☺️
Just tried this, skipped the oyster sauce. Loved it, plenty of sauce for the rice was the best part! Wife said its a bit salty but shes on pms so its ok
who are you to say whats authentic and whats not? everybody in the Philippines got their own recipe and way of cooking adobo. people. stop being a karen. @chef, keep it up! your adobo looks good. don’t mind my fellow filipinos hating on your recipe 😂😂😂
well i sometimes add oyster sauce and even worcesteshire ( sometimes hot worcestershire) and voila! it’s adobo to the next level! a little bit sweet adobo is just fine, btw. i like it a bit sweet too. to each his own preference

Hi dustbean, thank you so much for using our recipe! Good note to self 👍👍👍 Considering switching your soy sauce out to another brand as some brands are indeed saltier than the others according to our tasting experience.
You forgot to add bay leaf and pepper corns. No, we dont usually use onions should be garlicky though. Lots of garlic I mean and sugar to balance the sourness

Hi Roland, thanks for the recipe, one question on the peppercorn, did you mean the Szechuan Peppercorn? thanks
Just regular peppercorns
Adobo uses black peppercorns
black peppercorns
Happy cooking, Brian. Thank you everyone who helped Brian with his query.
Seldom do we use onions. But as we have hundreds of variations this must be as tasty.
If you don't use onion, what~may I ask~do you use instead? Looks like onion is the only veggie in the dish.
Yes, you are right, Ace of 2Hearts. We actually asked a Filipino friend and her version includes onion. :0)
Is it okay not to use sugar at all btw I'm from India I love ur video
Guess what I'm making for dinner , thank you ❤
Hehe. What are you making? :ppp Happy cooking, Odette!
I often seen bay leaves added to recipe, may I ask what flavor does it add on? Thanks.
Just tried this, skipped the oyster sauce. Loved it, plenty of sauce for the rice was the best part! Wife said its a bit salty but shes on pms so its ok
Ok as a Filipino, i'm not mad at the oyster sauce 👍also, Sugar and Onions are not essential to adobo. More authentic without sugar, chef.
Opps. Points noted. Thank you for not being mad at me 🙏🙏

Can we add cornflour in the end to make the gravy thick?
its ok to add corn flour if you want your sauce to be thick but just don't forget the main ingredients of adobo
Hi SMHBK! Yes absolutely but I reckon that if you reduce it well enough, you don't really need to add that. Hope this helps. Happy cooking!
Can i replace sugar with honey?
Oh no. I forgot the soy sauce and the vinegar.🤦♀️😂🤣😂lol

Note to self : Made this tonight followed exactly..need to reduce soy sauce and increase vinegar slightly...found it too salty
