As somone who sells profitarols/crean puffs, baking them is very hard. You can still make mistakes even you made them a lot of times. So I understand their frustrations. If the batter is too wet, make another batch but without the eggs then mix it with the 1st one.

I haven't been watching this season but still proud to see Alex pull it through the end. He almost quit but fought through it. I love the he still managed to laugh at his misfortune. I hope he does well after this show.
