I am coming up on one year with my 078, I only do filter, I am delighted with this grinder. I'll change my grinder or burrs when these wear out, in the meantime, just enjoying great coffee.
Glad to hear i'm not the only one who has been getting really heterogeneous ground sizes with the hyperburrs on the 78... thought it was because poor alingment, but oddly enough there was little fines on the bed of grounds and around the used filter. In my experience i didn't found them as sweet as the turbos, and i expected a little more clarity and acidity, but overall i think they are good. Plus, being able to swap is a good thing for keeping things interesting. I would like to hear what tipes of coffees and roasts had worked better for this type of burrs for you Asser?. Yes, they are indeed a bit weird. I've been playing around with various grind sizes, but at this point I'm actually moving a bit finer again and just accepting longish drawdowns. That's giving me increased complexity/sweetness with modern washed light roasts.
Recently decided on the 1Zpresso K-Ultra after looking at many of your videos. What a difference K-Ultra made in the taste of coffee. Also changed from a regular Hario dripper to a Switch. But, after a few weeks I had a flare in Fibromyalgia body pain, especially joints in shoulder & hands. I ended up letting a friend use the K-Ultra . A few days later he was sold on it and ended up buying it. The shoulder is only slightly better so I’m back to researching grinders. What electric grinder compares to the results of the K-Ultra for pour over without spending 600-800 USD? 🤷
Sorry to hear about that, hope the shoulder improves! There are quite a few grinders that have a similar-ish burr to the K-Ultra in the electric world. MHW-Bomber Sniper and Lagom Mini for example. But if you really want to get all the benefits of hand grinding without actually doing it, then the Femobook A3, A5, and A4Z are your best bet. The A3 and A5 will be more similar to K-Ultra, but you'll get even more flavor clarity with A4Z in exchange for some sweetness.

I went back to review again some of your older videos on Femobook grinders to nail which one to replace the 1Zpresso K-Ultra hand grinder with. I’m vacillating between your above suggestions, the A5 and A4Z mainly. If I’m understanding correctly the A5 grind is good for both brewing methods and the A4Z grind is exclusively for pour-over/drip brewing. I might like the A5’s option to grind for espresso (like the 1Zpresso K-Ultra) in the future, but not at the expense of a super amazing pour over with the A4Z. Would I lose the primary aim of a sweet, smooth, chocolate notes in a Sumatra Medium, and like roast, using a Switch pour-over brewing method with the A5 or would the A4Z give these notes and FAR surpass in all areas the A5 to the point I’d be VERY, very happy with the A4Z & never think of adding a future espresso machine for brewing for a long time to come? I love my 078 for filter and I'm glad I got it for the Kickstarter price. I have recently gotten into espresso but don't want to switch to the SSP multi-purpose burrs so I backed another Kickstarter project (the Geimori from Wirsh) for espresso. I doubt I'll be as lucky to get another grinder as solid as the Sculptor. Love the content as always! Thanks.
Bought 064 for filter severall months ago. I was choosing between this and DF54 or DF64 and chose Sculptor due to a better UX and look. I also don't have an espresso machine, so I need a grinder for filter coffee only. Quite satisfied with 064 for now, experimenting with pourover recipes. Read also your articles on Sculptor and it also helped me to prefer 064 instead of 078. Before buying Sculptor I was grinding my coffee with Timemore C2.
i've been using the 064s for over a year, got it for 300$ on KS. I experience zero "popcorning" , but i do try to slow feed, not always though. you forgot to mention its small size and integrated power supply. I get retention of 0.1g and I weight in/out on every shot - to the point where I'm pretty sure my old Timemore Black mirror scale is a bit off with the 0.1 retention level.. but - I do tap on its cover (lightly) when it's about to finish grinding as there's always a bean or two that need some small push inside. every time I open it up, I'm surprised how little ground are in there. putting it together, is extremely annoying and never goes smooth for me . i know some people don't open their Sculptors at all for cleaning.

Neither burr is top tier for me (so far at least). But if you really don't enjoy the style of the 078S stock burr, then Lebrew is very different. So it might feel like a meaningful upgrade.
Sort of feel like I’m crazy haha - I’ve had the 064S for 6 months or so and my biggest complaint about it is the UX of the power button. It’s borderline unresponsive / unreliable sometimes. Once a week or so I find I’m tapping that power button 3 or 4 times to start grinding. Just weird. Besides that, incredible grinder. Love it.
Hey, just talked to timemore about this. The switch has a 0,3second lag to take out unwanted taps. Once I knew that it works well. Dont know why they did it though..
@ I wonder if the sample rate is base on some internal clock that means sometimes you’re closer and farther from that 0.3s test interval - it just feels so inconsistent, but I could believe that’s what they did. Thanks for relaying the info!
Hey hey, thanks for that video! I was wondering if you could specify what you dont like about the 078s stock burrs' espresso performance. You mentioned astringency in the pour overs. Does this also translate to the espressos? Thanks in advance.
For me, the balance of acidity and sweetness doesn't quite hit home - a bit too much acidity and not enough sweetness. Usually acidity and aftertaste/flavor notes go hand-in-hand, but I feel like here you don't quite get a lingering pleasant acidity that transitions into a pleasant aftertaste. So overall, I think they are a bit in a no man's land espresso-wise. For pour over, I don't think I mentioned astringency in the video? I actually think they are more enjoyable for pour over than espresso.

I do like the 78s, but wouldn't buy it at current pricing. The burrs are fine, but nothing spectacular. For espresso, it does a decent job but will not impress you the way the 78 ghost burrs will for drip. I do occasionally use the 78s for drip, but the results are decent or acceptable, never great. The hopper works much better if you get a extension, from Timemore or third party, but unless the feed angle is altered to be steeper, trapped coffee beans will be a constant issue. It's a good machine but there are better options available at a similar price point. I would be delighted if a substantially better burr set was available for the 78s, but I don't think it's likely given that no other manufacturer makes a grinder using the 78mm size.
What do you think of the 064 turbo burrs vs say SSP, Lebrew filter and Ode gen 2 burrs? Which would be a better filter only setup for light/medium roast?
Totally different grinder to comment on here, but how would the Option-O Lagom P64 compare? The price point of the Lagom is a lot higher, but is a Sculptor comparable in quality and capacity, while being significantly cheaper, thus a much better value?
In my experience most 64 mm grinders perform comparable, although I'm seeing a bit more flavor clarity with lower RPM auger-fed burrs compared to the pancake style like P64. So yes, the Sculptor can compete.

@@tonybologna1252 I'm biased because p64 is one of my fav or my fav grinder I've used and I've used many. I had the 078s and re sold it. It was good too but didn't live the popcorning p64 is more versatile with portagiltrr forms and rpm dial that's not hidden on the back and easier to change burrs, p64 is not the best value in comparison but it is a nicer grinder overall vs the 64mm sculptor (based on my experiences with 078s) I did enjoy the stock burrs for espresso on 078s nice and balanced and did OK for pourover too. Didn't love the silly knocker thing I think for espresso it retains too much it's not just fines.
I was really not impressed with the lebrew filter burrs. In my opinion they are good multipurpose burrs but definitely not exclusively for filter. For me personally the 078s burrs are extremely acidity forward which can be problematic with certain coffees.
I would never buy another Timemore product. Those dirt bags don’t stand behind their products. They left me high and dry and refused to repair my blackmirror scales that failed after only six weeks.

That's great to hear! And I'm sure the burrs will have a very long life span, so who knows how the market will look at that point :)
I have a feeling most people will have fried motors before their burrs actually need replaced.
I came so close recently to purchasing one but decided to pull the trigger on the VS6 with gold burrs and it's been incredible so far
If you like flexibility, then you probably made the right choice! Still haven't tried VS6 but very curious.

YES! I'd been baffled that no one had mentioned this ever since I bought it. The timer thing explains a lot but it's still such a weird decision.

I have a 078s but 95% of the time I just do filter. Im between getting the Turbo burrs, switch and say good bye to espresso or try out the Lebrew

I have the Lebrew 64mm espresso burrs and they're a huge improvement on stock DLC burrs, in a DF64V
