So, badicallt, provolone is made out if cow milk, in the factory, by people doing some things with that milk and getting cheese in the end. Got it, thank you, very-very informative.

They have obviously sanitized their hands before entering the workspace. You wear gloves and then touch the tools, you think it is still all clean? Bacteria and other contaminants are everywhere, even in the air! I work in a lab and when we work with bacterial cultures, it is of utmost importance that we work near a hot flame (the hot air currents 'wafts' away any contaminats hanging in the air). We clean the workbench with alcohol before starting. We sterilize our tools, even flask rims, between every step in the hot fire and we try to work quick to prevent as many contaminants from coming onto our bacterial cultures. And guess what, we can do this with bare (sanitized) hands (if, of course, the bacterial cultures are not harmful). Such sterile practice is mostly prevalent in laboratories though, since it is for the purpose of research. In environments where food is made, hygiene is important, but the little bunch of bacteria that inevitably do end up in your food won't harm you at all. I mean, even cooking your food can't kill all bacteria. Also, you can't expect people be able to do intensive work like kneading cheese when surrounded by fire.

Gloves are generally less sanitary than bare hands because people tend to forget that gloves become contaminated the moment they touch anything else. When properly cleaned, bare hands are exactly as sterile as fresh gloves.

I bought some provolone the other day. And this stuff was so stinky. It wasn't expired. It was delicious. I told my girlfriend the stinkier the better. She hasn't taken a shower in a week, just kidding!

Provolone is just a Dan y mozzarella and other than the US a d if its really Italian like people say its maybe popular in Italy but outside the US I haven't, or I dk t know anyone that has heard of or tried 'provolone cheese' it sounds like a fake cheese made to suit a dietary requirment
