My only thing is that I do have a gluten-free and dairy free little family so I believe I can use the flower that I use sifted as you did. It’ll be fine the three milks to layer it with, I will have to substitute the cream part with almond whipping cream which is dairy free but it whips up pretty good and then for the top layer I will have to use the same but I think I’ll make it work. I make this too, just, I make a homemade pineapple jam to spread in-between the cake and whipped cream. Also, my piña colada recipe is a little different, and my cake texture is more tres leche-y, lol.
@@JeffandJosPuertoRicanKitchen, with fresh and frozen pineapple, sugar, a combo of pineapple and lemon juice, cinnamon, and pure vanilla. I boil it all until it's jelly like. I always make extra because I also make pastelillos and quesitos with this jam. :)

What are you trying to substitute for? You can make homemade buttermilk super easy or are you thinking lactose free?
