LOL I definitely appreciated that comment on the brunoise celeriac. My first stagiaire I had to brunoise potatoes for hours.
The food at these places blow my mind how do they do this stuff. WOW.
I went there last month! One of my favourite Michelin-starred restaurant I had the chance to visit in Paris (with Sola and Kei).

there is cream in risotto ? only my friends in Normandy do that
I counted 5, 7 if you count the bread and cheese course as courses
I had to julienne celery root every day at my last job. Talk about a pain in the butt. I can't imagine having to brunoise that much celery root! 🤣
This was a 6 course menu..........you could have a number of appetizers but it will count as only one course, same goes for the desserts.
