I'm an immigrant from Germany too and my parents did all the Christmas baking over the weekend of Thanksgiving including the Stollen. Then on Christmas Eve (When we celebrated Christmas) everything came out.
They made you wait a lot then! Usually, in Germany, we start eating our Christmas bakery results on the last Sunday in November and continue baking until Christmas :-)

Was always Chamomile tea not your regular tea. I have tried eating with regular tea but it's not the same. Question: My father always had pieces of marzipan throughout, not the log. Would you blend that in with the raisins or after the rasins?
Barbara, I made your Stollen recipe with no variation. Everything was homemade. Citron, marzipan, the whole bit. I’ve been letting it mellow for 2 weeks now. Alternating with cut up apple, orange and lemon. WOWZERS!! Is this amazing! I’ve saved this video and will definitely be making several of these next year!! I’m not German but I love Stöllen with marzipan! The ones at my local supermarket are so sweet and full of unhealthy preservatives. I made my own once but couldn’t wait to eat it. It was very tasty, even when fresh. You make it look so simple! Thank you for sharing 3 different recipes.
I LOVE the burnt raisins!! I usually will do my Stollen on the weekend after Thanksgiving. I have to smile when you speak because you pronounce English words with German sounds. I do not laugh at you but sure appreciate how hard English is to learn for non-native speakers. Unlike German, English diphthongs ARE NOT consistent. You do very well!!
I just made four loaves of Stollen. I make them all with marzipan. Couple of differences: I add lemon peel to my sugar and I dont use almond flour. Next year I will try the almond flour. I like the idea of making your own candied fruit, till next year. Merry Christmas!
I have never tried making Stolen, but I make Linzertorte every Christmas and I use either rum or whiskey in it and they have to sit at least a week before we eat it. I think it helps to mellow out the flavor of the liquor where it isn’t as noticeable.

It‘s helping with the fermentation. Once the butter is added, it becomes difficult for the dough to ferment so making the pre-dough makes sure the dough can rise properly.

The most traditional way is with the raisins etc. and marzipan. The town was probably Bayreuth? I had to look up how to write it correctly, too. It's a rather unusual spelling for a German town. Bayreuth is known for the "Bayreuther Festspiele" - Wagner Operas are performed that time every year, very big event with the Chancellor and other celebrities attending.
I am making this again this year, and I still wish my friend could eat it. Se is allergic to nuts, so the only thing i can make for her is Turkish Delight.
I wonder, if you made the regular dough with the fruit, but then used the poppyseed filling instead of marzipan, would it be a bit too much? I love the thought of the poppyseed filling, but I feel like I would miss the preserved fruits.

If I don’t have a mixer, I like kneading by hand. The way I was taught it, was using a large knife at the beginning, to cut and „smear“ the butter into the flour and once it’s all crumbled, I start kneading by hand.

No, it’s definitely not supposed to be burnt on the bottom. Did you try using a different colored baking sheet or placing aluminum foil under it? It might be your oven‘s bottom heat, try to put it on a higher rack if that seems an option.

citron melon it was something we used to have on the farm as a feedstock for animals but we also used to make our own citron just by dicing and removing seeds you can also make jams and jellies with it citron melon Just look it up on Wikipedia

To my knowledge it’s called Marzipan Stollen. Not sure if there are regions where they use a different name.
