How to make Apple Strudel (Apfelstrudel) ✪ MyGerman.Recipes

  • Ok, don't mind my messy hair, it was the third video I was recording that day and it did not affect the Apple Strudel (Apfelstrudel) :-) . Most people think of Vienna Apple Strudel but it is as well eaten in Munich and entire Bavaria. It is a favorite of many at the Oktoberfest. Don't use filo dough or puff pastry for this, the original dough is so easy to do and really tastes differently. Also, the stretching of the Apple Strudel dough is quite fun!

    I made this for the first time for my boyfriend's family, they make it very often (they are swiss and i'm spanish) and i was very nervous because i didnt expect it to be good but following this video it was so easy and they were super impressed!! My boyfriend even said it was better than the one his mom makes! 😱 Thank you!!!

    I've always loved apple strudel, but every time I order it in a restaurant it is cold and I like it warm with ice cream or whipped cream. I'm going to try this for a little Oktoberfest celebration with my family. Also, you do a great job explaining the steps!

    Viewer tip: she makes the dough stretching look easy. I put a hole in mine, then tried to roll it out again and yeah that’s not happening. I’m making new dough since everything is ready to go in it.

    By the time you started streaching the dough I felt so nostalgic. Reminded of me, my sister and my mother opening the dough together. And in the first time I was really surprised of how large it can get. Really nice sticking to our family traditions. My mother made sure my sister and I learned our family recipes. Congratulations for your channel.

    I just wanna say that i love your channel. I met it through this video, cause i was looking for something to do with apples. I'm from Brazil and there ain't many recipes with apples in here. And i'm not a really good cooker, but i follow your instructions e it went very weel. Now i want to do everything that you teach because everything looks awsome for me.     Watching you make this brought back some beautiful memories. My mom would make Strudel for church pot lucks and when my oldest brother came home on leave. I loved watching her. It was almost meditative watching her stretch the dough.
    I was horrible at it myself. Maybe the patience I've learned over the years will make for success when I try to make Strudel again.

      I also like to make the dough paper thin and only roll it over once and make another 1 or 2
      its better for diabetics too.

    Viewer tip: Give both KG and (US) measurements We are Americans we dont follow the Grams or metric system we are to busy making America Great in Cups & TSP, FYI your hair looked fine & you like all of us were nerves for family is lucky to have you.. you did a great JOB!! cant wait to make it.       If you go to the blogpost for this recipe, there is a link right below the ingredients, where you can switch between metric and US customary measures. Since they are German recipes, they come in metrics but the program converts it to what you are used to. However, the numbers are often a little odd. Easiest fix is to get a kitchen scale and go with metrics but I understand that it’s outlandish, I feel the same way about the US customary measures. I might make a video about that topic one day 😄

      I bought a kitchen scale for making bread. One of my better investments. I don't have to hunt around for measuring cups and spoons only to find my husband used them to measure something in the garage.

    Thank you so much for the recipe! Apfelstrudel has been my favorite dessert since I first tried it on a trip to Vienna and now that we're in confinement here in Spain and I have so much free time I figured I'd try to make it myself. I divided the recipe into three parts because I was scared to work with such a big sheet of dough 😂 it took triple the time but they came out perfect and delicious! 💕

      Did you use cups or a scale to measure the ingredients? I recommend using a scale and metric measurements.

    I’m looking forward to making this. The best I ever had was in a restaurant above a shop in Roedental when I was looking at Hummels and Mikasa plates. I loved the vanilla cream sauce that was poured over top. It really added something special.

    Als ich das sah, spielten sie "The Beer Barrel Polka", dann spielten sie "Ich will sie nicht, du kannst sie haben, sie ist zu fett für mich Polka". Dies war ein lustiger Tag. Dann habe ich aus dem Fenster geschaut, und ich werde nur verdammt sein, dass eine dicke Frau ein Kind herumgeschlagen hat. Erinnerte mich an eine Tante, die mir früher das Gleiche angetan hatte. Gerade als ich dachte, der Tag könnte nicht besser werden, brachte eine Nachbarin eine ganze Menge Äpfel zu meiner bescheidenen Unterkunft.     Wunderbar! I made this for the first time and it was great. And it was fun to stretch out the dough with my hands. I used my mixer to knead the dough ( a wonderful invention) ha ha then I put the dough in the fridge for about 3-4 hrs. The dough was probably the best I have ever made. I will most definitely make this again. Thanks you are a great teacher……👍🏻

    My mom was from Munich and this brought back so many warm memories.     Funny that you mention NOT to use the filo/philo. We did that only last year and it was a mistake. Not that anything tasted bad, but it just was not real strudel. It really is no short cut when it comes to proper strudel taste & texture, and as you say, the dough really is easy to make. Mit quark strudel we sometimes add a little walnut, or plumped raisins. What are your thoughts on adding cranberries? (fresh and sweetened or dried and *plumped).
    [My Lady, we love your "messy hair", lol. We do not see enough of these beautiful hairstyles now-a-days.]
    *not sure if I use the word properly but I mean soaked in warm water until they "plump" up. Perhaps like one does when making raisin bread.

      I think that can work but I only ever used the oil from the recipe that I know.

    I love that you haven't put dried fruit in it. I hate dried fruit (currants, sultanas, raisins) and always pick them out! As a Brit, it makes Christmas a little difficult as so many of our traditional Christmas food is made from this mix!

      Sounds like you had stollen. A lot of people either like the fruit mix or absolutely hate it! 😆I love it all including fruit cake and mince meat pie!! Think I'm the ONLY one in the family who did! And yes, I love to make them, too. My homemade minced meat filling takes me 3 days mostly letting it meld in the fridge. But its not cheap to make with all you need!

    OMGoodness, I now recall how when a child my Mother made these little bow shaped pastries with strudel dough and added dabs of jam. Ha ha ha, I only now 18:10 remember it when you made that little leftover mini jam strudel. Lol, over 50 years ago...thanks for jogging the memories ;-) .

    A year or two ago I read a post by an irritated guy criticizing the American in the video for messing up the strudel. He was upset bec that person rolled up the log exactly as you did.....by first tucking in the sides to act as a seal. The identical procedure used the world over with burritos, egg rolls or anything wrapped cylindrically in dough, and containing a filling which releases its liquid when cooked, baked or fried.

    I love apfelstrudel but every time I’ve tried to make it at home I’ve had trouble rolling the dough thin enough. I think you may have just given me the answer to my problem. I might not be letting the dough rest long enough. Octoberfest is coming soon near my town in Ohio. We have a rich German heritage in the area and there is lots of authentic German food, I can’t wait 😊 Thank you for the video. I’m going to try making apfelstrudel again this evening 😁

    Hi there, I'm really hoping you read this before Christmas. I really want to make this recipe, but I was hoping that I could make it the day before, the pastry, rolling process and then store I the fridge over night so that I don't have to stress about the pastry process on Christmas day. Could I make it the day before? Claire

      Yes, you can but make sure your apples don’t have too much juice if you already put them in the day before. Otherwise the juice might soak the dough. Also, cover it well with cling wrap to prevent the dough to dry out. Merry Christmas! 🎄
