No east Indian wedding buffet is complete without this amazing and simple east Indian wedding pickle...It is made with very few ingredients..the end result is sheer deliciousness. Ingredients for today's recipe 1 small raw papaya sliced into thin flat pieces 3-4 carrots peeled and sliced into thin flat pieces 1 inch of ginger peeled & sliced into thin flat pieces 5-6 large garlic cloves piered with a fork 3-4 green chillies slit (large green chillies are preferred for this recipe) 6-7 dates/khajoor deseeded and cut into halves Salt as per taste 1 tbsp of haldi/turmeric powder 1 & 3/4 cup of vinegar 4-5 tbsp of sugar 1 tsp of split mustard seeds/mustard powder used for pickles 1 tsp of red chilli powder Method Take a large steel plate ,put the papaya,carrots,ginger & green chillies onto the plate Add salt (4-5 tbsp)and the haldi powder .mix well..keep in the sun for atleast 7 hours. Soak the dates in some of the vinegar for 30 mins. Heat a large pan,add the vinegar + the vinegar from the soaked dates,add the sugar Stir till all of the sugar is dissolved.Add the split mustard seeds.red chilli powder & dates..mix well.Switch off the flame add the mixed and sun dried vegetables..mix well.Let it cool completely to room temp..Transfer to a clean and dry glass jar/bottle.Keep it aside for 3-4 days ,stirring in between atleast twice a day. After 3-4 days you will see that the colour of the papaya and the carrots have changed ,also their texture is soft as if cooked and there is no bitter taste present from the mustard seeds..Your East Indian Wedding Pickle is all ready to enjoy.
