Sorry for not knowing the names right off, but that one where he tells the captain that he is not a particularly good Captain is one of my all-time favorite Star Trek quotes. Freaking awesome, because he nailed it! And there are many more besides the ones here.
Just a thought about these quotes which are all great, but I'm going to mention one of my personal favorites which comes from Best of Both Worlds. This is an interchange between Riker and Locutus (in case someone out there doesn't, Locutus is Picard as a Borg) I forget exactly what is mentioned here but I remember the lines. Locutus: "If you attempt to intervene we will destroy you" Riker: "Well take your best shot because we are about to intervene."
I hadn't seen Frakes in any TV before 'ST:TNG', but I thought he was likeable from the start as an actor, although the writing of Riker was often hit and miss. It must have been intimidating acting beside Stewart at first. He's a talented director with several stand-out episodes.
My favourite is when he said "SHUT UP; AS IN CLOSE YOUR MOUTH AND STOP TALKING!" I used it one day when I was working in a call center environment and i was the only one on the phone. Everyone else was yacking away and I was having trouble hearing the caller. I tried lesser requests to get people to be quiet but finally used that line loudly and clearly. there was dead glorious silence from my coworkers for 5 minutes!
So after Next Gen I totally lost interest in Star Trek. I just didn't care for the other spinoffs that fallowed. But I just never understood why William Riker wasn't the character they fallowed for a Spinoff? all of Next Gen seemed to center around it being Riker's coming of age to be the Captain... and it just didn't happen the way we had hoped.
Joe Grace I don't really mind. If he was promoted to captain then there would be no room for Picard, and that would have been a shame. They have a great chemistry together. And besides: captain Riker sounds less awesome than Number 1 or Commander Riker :D
2ndltalfredludlow I think it would of been great, seeing whom from the old crew stuck it out with Riker, who the new number one will be, and honestly with the legacy of Picard, it would of been cool to see his closure as a character. His promotion to admiral like what had happened originally to Kirk. So yeah, the spin off could of been great and getting to see the progressions of various characters like Data, Warf, Dianna and so on under the rule of Captain Riker, possibly having to question 'is this how Picard would of done it?' and go from telling the story of Riker, number one... to Riker the captain. Ah well, this is all speculation anyways
I think that was deliberate. They wanted to keep some of that spirit of Kirk in the show. Making him first officer meant he still got to go with the away teams.

Jonathan Frakes is the !BEST! Director in ALL of Star Trek Franchise, I don't know why people don't realize it! He directed few of the best TNG episodes, and also the movies in the Series which were any good, one of which was First Contact!! People need to realize this..
Roddenberry, Loved Kirk in alter ego form on TOS. So he did it in TNG by making Kirk into 2 characters...Picard and Riker. Picard: intellect, Reason and cerebral Riker: Tough, aggressive and sometimes impulsive.

Riker's judgement was usually very good but he really couldn't see past his own ego when it came to Captain Jellicoe. Jellicoe was under huge strain with trying to prevent a war, dealing with medaling Carddasians and taking command of a new ship all at the time. He needed Riker's support not his insubordination.
These weren't my favorite tbh. A few of mine that come to mind are, "Swell", "I HATE poker", and "Lollipop. It's a good ship" because of how seriously he says them. And of course, "No you can't don't even try!"
