DO NOT USE SOAP: unseasoned tajine will absorb anything including soap. Use only water and scrub, without soap, to wash both unseasoned and seasoned tajine.
I have seasoned my tagine, but I have found that my food dries out more quickly than when I used an unseasoned clay pot. It's as though the cooked oil has blocked the pores so that when I soak it in the water prior to cooking, the water does not gets absorbed to be released as steam during cooking. Does this make sense?
