    Your chocolates are absolutely beautiful! They look like they came right out of a factory :-) I am an amateur candy maker myself but am definitely still a novice. Sadly, there aren't that many resources on making candy the old-fashioned way, especially hand dipping techniques. So I was very happy to see you post these videos. I know everyone has their trade secrets, but I was wondering if you would be willing to something with me? I have been looking for a way to make my chocolates look like yours, "disc" or "puck" shaped instead of rolling the fondant in balls. How do you make the fondant into those disc shapes?

      I roll the fondant out using square dowels and a rolling pin. I do this to get the height i want. Then I cut the fondant with a round small cookie cutter like tool. The cookie cutter is custom made, but other things will work. The trick is to make sure the fondant is cooked to the right temp. Hope that helps. BTW I don't have any trade secrets. I have taught many people the technique i use handed down to me by my grandpa.

    Ryan, where did you get your chocolate melter/tempering machine?

      I used to make them. But materials have become to expensive and my time is scarce.

      @@mentalmoxie is it warmed by a halogen light underneath? What computer did you use to sync the temp and warmer?
