I would not peel them the peel has more nutrients than the the sweet potato flesh great for us and our fur friends also great for diabetics dogs and people and they taste great I like mine baked or mashed

i had no problem feeding my dog sweet tater with skin, i did not dehydrate , i baked them
About how thick are the slices?
3-5 mm thick

Why did they lose all of the color.
You can blanch the sweet potatoes for 2-3mins to retain the color.
