This is the application of the mathematical objects in the video (holes, twists, turning number, defects and all) to real life materials. These materials are important when we talk about making superconductors, transistors etc. Not all subjects in pure math are "useful" as you have defined it. But when complex numbers and imaginary numbers were first discovered, no one thought it would be important; because they weren't "useful" in the real world. Nowadays, complex numbers are used in computer algorithms, electronics, quantum mechanics etc.

If you pay attention to the way the circle passes through itself, you can see this sorta loop thing it forms. When you keep pulling on the circle, the loop appears to get smaller and smaller. The problem with a "crease" is that this "loop" will only ever get infinitely smaller, never truly straightening out. It may appear as if the circle has been turned inside-out, but it's not. There is still gonna be that loop in it.

I love this style of educational video. If you want to explain something properly, you need a character that mimics the viewer and asks the same questions. You can't just have an expert shove it in your face with no resistance.

If you pay attention to the way the circle passes through itself, you can see this sorta loop thing it forms. When you keep pulling on the circle, the loop appears to get smaller and smaller. The problem with a "crease" is that this "loop" will only ever get infinitely smaller, never truly straightening out. It may appear as if the circle has been turned inside-out, but it's not. There is still gonna be that loop in it.
