  • Weber SmokeFire - Reverse Sear Tomahawk
    Ribeye with that loooooong bone in!
    We are continuing with our breaking in and experimenting with our new SmokeFire, so we decided to Bbq one of our favourites with some quality reverse seared Tomahawk steaks.
    We ran the pit low n slow till the steaks hit around 46c, we then rested for around 10 mins while we cranked the SmokeFire all the way up to 310c and finished those steaks off by searing hot n fast! Simply mouth watering!!
    The diversity of this bbq is awesome.

    Instructions from video:
    1. Oil and season steaks
    2. Set smoke fire to 135 degrees celcius. Get steaks on
    3. Turn on smoke boost
    4. After 20 mins return to 135 c (turn off smoke boost)
    5. Wait for probe temp to hit 47 degrees celcius (usually around an hour for 1.5kg tomahawks)
    6. Set steaks aside to rest
    7. Set temp to 315 degrees celcius (for reverse sear)
    8.Once temp achieved put steak in bbq
    9. Keep rotating steaks to avoid burning (aim to render fat but sear steak)
    10. Cook to 53 degrees celcius (med rare)

    I’ve been wary of pellet grills for actual grilling because most will barely get to 500F. But that thing was maxed out a 600. Really liking these webers.

    did those grates come with the weber? I'm not seeing where one can get those upgraded looking grates

      Those grates are part of the weber GBS (Gourmet BBQ System) that also fit the kettle range. You can buy them as an add on.

    Where do you get that grill grate with the round insert for the seat grate?

      That's an official weber accessory as part of the GBS system, available at all offical weber specialists.

    I follow you and I'm Italian I bought the second generation Weber smoke fire. i saw on youtube that he had a lot of problems or did you ever have? could you give me some advice to avoid them? thank you

      Hey mate. Thanks for subscribing. The main issues we have had has been flame out. The way to avoid that is to check your hopper and just run your hand through insuring the pellets are sitting well. We have also had the occasional flare up. It is important to make sure your main bbq area is clean after each cook up.

    weber for the win.. them look amazing.. where is the grease fire every body saying u cant grill on a weber smokefire with have a grease fire, lol

      Haha yes exactly. Thanks Scotty. We have had a grease fire before but only when we haven’t maintained it properly.

    Found your channel by accident. Love what your are doing. I was pretty much turned off the Wildfire and poised to buy a Timberline until I saw your videos. Must say though, that fat flare up concerns me.

      Oh cheers thanks mate! That’s not actually a fat flare up, that’s the fan blowing the heat on maximum heat. All controlled

    Doesn’t oil form a protective barrier so the smoke doesn’t penetrate the meat?

      Nah it just acts as a binder for the rub. Personal preference on whether or not you want to use it though. Cheers for the question!

    Great video. The high temp searing capabilities seem pretty impressive (including getting up to temp impressively fast), do you think this can replace the need for a gas grill?

      Thanks mate. It might do, if you can't have both. Having said that, we just bought a Weber Genesis II gas grill for the sake of hot, easy, instantaneous heat, and fast easy cooking.

      Yes it could replace a gas grill. It does awesome steaks and gets hot very quickly.
      In saying that I won’t be getting rid of my Weber family Q.
      The smokefire is great but it does use a lot of pellets and requires more cleaning compared to the Q.
      I will still use the Q during the week and leave the Smokefire for weekend duties when I have a bit more time.
      If you only have room for one then get the Smokefire.

    Weighing up purchasing a smoke fire or a Genesis... tough decision

      It depends on whether you want to do things low n slow, at which time the SmokeFire is the smart choice.

      @@UnderTheHoodBBQ could you demonstrate maybe a full size chicken or a gammon joint using the smoke fire? I’ve read reviews that the design has a number of issues but those steaks looked unreal 😋

      @@UnderTheHoodBBQ Thanks I will have a browse now. I don’t think we have the gen 2 in the UK yet. I’m also debating between the Spirit 2 E320, Genesis 2 E330 and the smoke fire. I want to make the right choice as it’s my first bbq I’ll have purchased since buying a house.

    It was junk when it was released in the USA. Believe the beta testers did Weber’s work for then and they have released a gen 2.

      Heya Big D MC. Yes that is correct the new Gen 2 is by far an awesome bbq. They’ve overhauled all the parts that had issues. Cheers

    Was going to try this until I saw a single tomahawk costs $30. But I will keep in mind if I become meat-happy rich.

      Back to say that for Christmas I was given a “Steak of the Month” gift card. This month is Tomahawk Ribeye so after nearly a year I finally get to try your technique!
