    Haven't watched you for ages but you came up in a search, so a new subscriber here. Looks like perfection, going to make your version. I never buy packets of yeast but just so you know a packet is 2 1/4 teaspoons but you obviously put 2 1/2 so that's the way I am going to roll.

    Ok- you had me at FOCACCIA /GARIC/ OLIVE OIL! If I'm going to cheat on a Keto type diet, it will be with your recipe! Can one make Foccacia Sour Dough?? That just looks amazing! I would not say no to some black olives :-) Thanks for sharing ~ Diane

    Mmmm, hey Joe, we used to go to an Italian restaurant years ago. The owner offered us focaccia bread, but his was like a cracker with a tiny amount of cheese and topped with arugula. I’d love to find a recipe for that. Maybe it has a different name.

    I don't understand as to why people don't just use the instant yeast rather that the laborious time wasting active yeast. It makes things so much easier and quicker. I put all my ingredients together in a bowl, mix thru the warm water and egg. spray with olive oil and let it raise 3 times. My foccaccia is to die for people tell me, but much easier to put together.

      The recipe calls for the following amounts of salt:
      Dough: A heaping tablespoon (a bit more than a tablespoon) of salt, dissolved in two cups of warm water.
      Garlic Confit: A pinch of salt (about 1/8 of a teaspoon) added to the garlic and olive oil mixture.
      Final Topping: Half a teaspoon of sea salt sprinkled over the top of the focaccia before baking.
