- This Instant Pot Sticky Toffee Pudding is the perfect fall or winter dessert that also needs no work, and is very simple to make. This recipe makes the most indulgent Sticky Toffee Pudding Cake that does not even require any special tools, not even a whisk. You can pretty much whip it up with just a spoon or a fork.
A Sticky Toffee Pudding (or sticky date pudding) is a Classic English Dessert. It has a rich cake that has to be steamed instead of baked, unlike most cakes. It has a rich, moist, dense melt in the mouth cake which is taken to a whole new level once the toffee sauce is poured on top. An absolute treat and the perfect cozy dessert!
Since it has to be steamed, it makes an absolutely amazing candidate for an Instant Pot. You just set it and forget it for an hour and then when it's done, pour the toffee sauce and devour as is or with a scoop of Vanilla Ice cream.
Ingredients
For Cake:
- 1 cup or 150gm of Pitted Chopped Dates (approx 225gm whole)
- 2/3 cup Hot Steeped Tea (/orange Pekoe/English Breakfast)
- 1/2 tsp Baking Soda
- 1/4 cup (35-40gms) Dark Brown Sugar - You may also use Regular Brown Sugar
- 1/3 cup (75gm) Softened Butter
- 2 Large Eggs - Room Temperature
- 2-3 tbsp Milk
- 1.5tsp Baking Powder
- 1 cup (130gm) Flour
Butterscotch Toffee Sauce
- 30gm butter
- 1/2 cup (100gm) Dark brown sugar - You may also use Regular Brown Sugar fi
- 1/3 cup (80ml) heavy cream
- 1 tsp Vanilla
- 1/2 to 1 tsp Salt - Adjust to taste

Can we use Fresh dates how much would be weight
Yes you can. I also used fresh dates but they were just pitted and chopped. Whole dates with seeds will be around 200-225grams but you will still have to use the tea and the whole steps :)

falak what do we call pitted date in pakistan? what u have, seems dry..is it dry date aka chuwara or regular date..
No these are regular pitted medjool dates and they shouldn’t be dry, i dono why they look that way but they are the ones that have a buttery texture
The dates we used for iftar 😊. Pitted means remove the seed.
