    Pro-tip from Chef Jon on RUclips - salt the mushrooms AFTER they're cooked and caramelized. That way they won't release as much water immediately and will actually caramelize first.

      Ok, but it looks to me that he wants the water out as he did say that otherwise the meatloaf would fall apart from the moisture in the mushrooms.

    I made this recipe but used all ground beef rather than half pork. It was by far the best meat loaf I have ever eaten. Even my wife loved it and It is the only meat loaf recipe she has ever liked. The tangy glaze on top of the meatloaf turns it from a good meat loaf into an amazing one. I felt that the sauce on top completely made the recipe. I would love some more ground beef recipe's from Headbanger's Kitchen.
    P.S anyone looking at keto as a potential life style or as a method for weight loss I encourage you to give it a try. I'm down 50lbs in 6 weeks, started at 370 and currently 319. Through the process I have been able to eat delicious and rich foods and have felt satisfied throughout.

    I made this tonight, my first time making meatloaf, and it was AWESOME!! I used chive and onion cream cheese instead of regular and it was sooo good! I didn't make the special sauce bc I was being lazy but I did use sugar free ketchup and it was still tasty. Thank you for the abundance of delicious keto friendly recipes. This is my go to channel for keto meal ideas. Horns up, you rock!!! 🤘

    Made this tonight. GOOD, GOOD, GOOD! I took your father's advice and added some extra seasonings (I added a beef bouillon to the vegetables, and I was more generous with my dried herb blend). I paired the meatloaf with your mashed cauliflower recipe. Dinner did not disappoint. Can't wait for leftovers tomorrow.

    GREAT looking meatloaf and that sauce! Wow! I know what your Dad was saying and it is a compliment. He meant that the meatloaf is not overpowered by other seasonings. 'Bland' is an unfortunate choice of words but he did explain well why he said what he did. A GOOD meatloaf tastes like...meat but enhanced (with a good balance of other ingredients) just enough to bring out the maximum flavour. It seems like you did that!     Meatloaf.
    1 lb. Venison ground.
    1/2 onion, chopped
    2 celery stalks, chopped
    Salt, pepper, garlic salt. Cover that meat.
    1 egg
    Crushed pork rinds.
    Mix till incorporated.
    Form in a small loaf pan sprayed with Pam.
    Turn out to a slotted baking pan.
    Cook @ 350 for an hour.
    Put sf BBQ sauce on top the last 15 minutes.
    Enjoy

    Something that is really amazing is as you are preparing your loaf, you do one layer of your meatloaf, then put cheese in the middle like mozzarella, then put remaining meatloaf over that and shape into loaf. You will have a stuffed Keto meatloaf ther is so good!

    Made this recipe tonight for my family and even though I am the only meatloaf lover in my family, my sons and husband loved this recipe. Much better than the meatloaf of my youth (which included breadcrumbs!). Also, really loved the sauce in this recipe. I couldn't get my puree to thicken, so I added a small can of tomato paste, and that did the trick (it was probably thicker than recipe called for, but still delicious). Thanks for giving me one of my favorite meals back -- Meatloaf!

    I’ve just purchased the book through Blackwells in the U.K. at £17.99 with free delivery (£1.00 off). You can get it on amazon uk but it costs over £20.00 for a used book and over £30 for new.
    Felt generous as it’s near to Xmas time so bought myself a present and hopefully some royalties will be going the way of a deserving author.

    It’s what we call ‘comfort food’ in America, and comfort food is often relatively ‘bland’, but savory.
    I’m surprised you like western food so much. I’ve worked with many Indians in the automotive industry in Detroit, and I don’t find them to be big frequenters of our restaurants. Not spicy 🌶 enough.
    I prefer Indian food any day of the week! 😋

    That looks amazing. Meatloaf is an essential American food, and yeah, Americans love meat, the taste of meat itself. I'm definitely going to try this method with the cooked veggies and cream cheese, and the tomato sauce. I've made a few keto meatloaves (meatloafs?) with different methods. My favorite is to use ground up chicharrones, (fried pig skin) as a bread crumb substitute that tastes better than bread crumbs, and to put bacon on it. (because, more meat.) lol

    Hello from Colorado, Sahil! Going to be making ketoloaf this weekend and instead of sugar-free ketchup, I'm going to try your sauce, it looks AMAZING, as always.
    I have a (hopefully helpful) suggestion: In my regular meatloaf I add breadcrumbs, but in ketoloaf I use almond flour. Both help soak up the moisture from veggies (I just use onion) and meat, and it's less crumbly and more...loafy?? Add about 1/4 - 1/2 cup (2 - 4oz) per pound of meat roughly. Basically enough where it sticks together, so adjust accordingly. If you want a bit more flavor, add in some of the sauce/ketchup into the meat mixture until you can smell it. Adds tons of flavor and ties in the topping. You might have to cook out more of the moisture from the veggies, or reduce the amount to compensate for the addition of the sauce. I LOVE your recipes and always look forward to seeing a new one pop up!

    eta: I totally get what Dad 🥰 is saying. His palate is accustomed to spices, and since this recipe has very little in the way of spices, it seems bland, to him. Now, to me … I can’t wait to try this exact thing. Might be a minute, but I will!

    Have to tell you that you have convinced me that measuring ingredients in grams is the most accurate and sensible way to go... so I finally got a digital kitchen scale! An extra benefit of having the scale near at hand is that it makes looking up nutrition info and calculating macros for everything from individual single item snacks to portions of complex recipes so much easier. Glad I finally took your advice.
    You are a very talented adapter of recipes and I can truly appreciate your skill in "translating" normally high carb dishes into delicious low carb versions that we can make and enjoy.
    About 2 weeks ago, before I found your meatloaf recipe, I decided to try to adapt a friend's conventional meatloaf recipe to a keto-friendly form. One of my adaptation ideas was to substitute a small amount of psyllium husk for the high carb bread crumbs listed as an ingredient in her recipe. Anticipating that the psyllium would absorb the moist ingredients, I added an extra egg and a bit more broth to compensate. The meatloaf had a nice aroma as it baked and I am always tempted to cut into the hot meatloaf right out of the oven. The texture of the meatloaf seemed very "solid" as I sliced it, but nothing prepared me for the literal "bounce" when we bit into it! (Trampoline manufacturers are clamoring for the formula!) My dear, kind husband remarked that he won't have to worry that the meatloaf slices will crumble when he makes a sandwich!
    It became clear to me that adapting recipes to keto ingredients is NOT simple and calls for experience, creativity and discernment. I really appreciate the comments and explanations you share while you are cooking because you help us to avoid mistakes and pitfalls like mine. Thanks for all you do for us, Sahil! You are the best.
    The tasting part of your videos is always a favorite of mine. Your face is so expressive. You, Sahil, are a true foodie! So glad to meet / hear your wife and parents in your videos. It's such a nice homey touch. Your Dad's reactions in his tastings of your culinary creations are priceless. (We realize that he is not into keto and that his preferences lean toward spicy foods, but we still like to hear what he has to say.) You and your Dad are very photogenic and the mischief and humor in your personalities totally comes across in your videos. Mom and Dipti are beautiful, but don't seem drawn to the camera stuff.

    The Keto Life cookbook is beautiful and super useful. I think most Keto cooks will find some interesting and easy recipes.
