      After you dip into the sour cream, make the remaining part flat and smooth (I use a spoon or spatula) and the next time you go to use it, there won't be that liquid sitting on top.

    All you have to do is store open and closed dairy cartons of sour cream, yogurt, cottage cream is upside down. The same way you store open paint to cut off the air.
    Ps. I store the opened ones on a saucer or container with sides so if whey separates, it doesn't spill onto the refrig shelf.

    Never thought of that. It’s an excellent idea, and makes a lot of sense. I always have sour cream left over, and it goes bad before we can use it all. If I buy a smaller amount, then we don’t have enough, so I always buy the largest size available, but end up throwing some of it out. I’ll give this a try. Thanks!

    I know this has nothing to do with making sour cream last longer BUT: my in-laws _love_ sour cream (who doesn't??) This wouldn't be a problem except they are both obese and they don't need all that added fat and calories. I cook for them, often, and while I can't gold ~wild~ as far as making them something super healthy (because they won't eat it) I have started using full-fat plain greek yogurt. I use it in a 1:3 ratio & they can't tell! There's the added benefit of extra protein _and_ probiotics 🙂 I realize this isn't ~new~ but many people dislike the swap because they've gone their whole lives using plain, non-fat, _regular_ yogurt, but you get the best results with Greek Yogurt or Skyr.
    If the recipe isn't super sour cream-forward, I up the amount of yogurt. If it's in cakes or cookies? Swap it entirely. I've done it myself for years, but they're a great example of how you really can't tell a difference 😉

    • @marnettadavidsonwest6757
      @marnettadavidsonwest6757 4 месяца назад +2

      Though any Greek yogurt is and well can be a bit pricey why I been using the GV brand from Walmart yeah taste the same and I sure that would work just as well in place of sour cream but I do like the sour cream but I don't eat it fast so yes putting the plastic wrap would be the best way to go but well

      @@marnettadavidsonwest6757 Yes, Greek yogurt may be cost prohibitive to some. You just gotta ask yourself what well-being is worth, ya know? I'm thrifty as all get out, but Greek yogurt lasts quite a bit of time & can be used for so many things. You did make a good point though :)

      @@CookingAtPamsPlace It's not about the number of people. One cook can introduce bacteria into the container: licking and reusing the spoon, spooning other items and then the sour cream. Sour cream is just a wonderful growing medium for anything that gets into it, no matter how it gets into it.

    Everyone saying to store upside down, not saying you're wrong, but if this plastic wrap trick works too then you can store the container upright and eliminate that leakage hazard.
    And I'm grateful to all of you and Pam, never heard of this before. I hardly use sour cream, but when I do it's always been pretty much a given that I'd end up dumping the leftover. Will try this next time.
