      앞에 나온 템퍼링이란걸 하면 녹는점이 35도 까지도 변해서 안녹는거에요 ㅎㅎ 입안에 들어가면 녹게 됩니당

    To people who don't know: He is actually tempering the chocolate by pouring it onto the table. Cooling the chocolate quickly and evenly will change the chocolate chemical structure so when it cools down it will be glossy and shiny. If he didn't do that, the chocolate will look dull and ugly. It is a skill to know when the chocolate is ready to use.

      초콜릿을 알맞은 온도로 식혀야 초콜릿 안에 있는 기름(코코아버터)과 분리되지 않기 때문에 그렇게 하는거에요. 템퍼링 맞습니다.

      it's called tempering chocolate, they do it on the tabletop to cool it down to a specific temperature so when it hardens, it becomes smooth, shiny and snappy

      I had the same question, and if I am not wrong (I'm no expert), I think the cool surface of the marble top helps to temper the chocolate, which prevents blooming (the white stuff that forms on chocolate sometimes), creating a smooth glossy surface.
      Any experts out there care to share more? :)

    I like the fact that he's handling the chocolate in a very clean manner cleaned tools and has a hat and mask. Unlike the wierd old dude from the hurcules candy channel. Dude just straight up plays with it with his hands and no real standards of hygiene. Dude even grabs the corn syrup with his bare hands and rinses his hands in the water for the boil. Imagine all that dead skin and hair that's in their candy. This guys is clearly a professional!

      And yes banging those polycarbonate moulds does infact get rid of bubbles. The leftover bubbles would need to be popped by cocktail stick or similar. If he wasnt so vigorous with his mixing he can reduce the amount of bubbles in his tempered chocolate. Yes you can get machines to temper chocolate. They are however incredibly expensive especially when you have to temper vast quantities of chocolate. Like I said above this is clearly a small batch artisan product. You can enjoy inferior mass produced crap but I have alot of respect for artisans and the skills they bring. We can never replace artisans with machines only aid them with machinery. I'm guessing those callets produced will be sold in a shop. I'm wondering whether they have actually made the chocolate themselves which again would call for expensive machines...

      Simon WoodburyForget Some people will pay extra for goods that they know is hand crafted. Anyone can walk into a gas station and buy a Hershey’s bar made by the thousands at once and that’s fine and all but nothing compares to artisan bread, chocolates, cheeses. Stuff that takes time and skill that can’t be replicated by a machine.

      @@b0x1n9f4n It is a process called tempering the chocolate. Cooling it down and warming it back up. It produces a sheen and snap on the finished product. It also helps to prevent blooming and keeps a smooth taste.

      Tempering chocolate helps enhance the taste because the fat & sugar are much more incorporated with the other ingredients of the chocolate. Which in return, stops the chocolate from blooming.
      It also gives a smooth look and good snap when you bite it

      대신답변 죄송합니다! 템퍼링이라는 기술인데 초콜릿을 녹이고 식히면서 초콜릿 결정을 안정화 시키는겁니다 템퍼링을 하면 안했을때보다 초콜릿이 더 입안에서 잘 녹고 광택이 좋아져요🙂

    Sorry but I didn't see him make any chocolate. He prepared chocolate treats but didn't make the chocolate.
    Also, what's the point in spreading the chocolate out on a counter just to put it back into the bowl? It's as though he wanted to add bacteria.

      It's called tempering the chocolate.
      It enhances the taste, gives a smooth look & gives a better snap when you're biting the chocolates.
      That process also stop it from blooming.
      Blooming happens when the fat or sugar in the chocolate crystallize on the surface because of temperature changes. It's not harmful but it gives the chocolate a weird look

      Вопрос нафига он месит на этом столе? Будь то настоящий или искусственный камень. Всяко ан большой площади больше выли и др. гадости, чем в тарелке. Это раз. Во-вторых - металлическим скребком по пластику?! Шоколад с пластиком.... Смотрите не подавитесь слюной.....
