Having a side hustle, which is also mostly passive, is awesome. I used to have something like this but with a windows tool. The problem is to find a project idea which will make enough money and will keep the developer engaged for long time. I have many abandoned projects, which had potential, but my interest vanished... Having a good idea is the only thing which is currently stopping me to do a side hustle. 6:00 - that's what I did xD . I was so fed up with coding, that I wanted to do something else... so I was a truck driver for a short time. But it was terrible. Came back to coding with new ideas ;)
If I work as a full-time developer, my employer might not be happy if I do some side hustle with coding. This is holding me back, even though I think you are right with it. Havint multiple sources of income could be very beneficial.
As i said at the end. The company is looking out for itself first. Consider negotiating with a smaller company for the rights to work on something separate. Tell HR that like google you need to keep your other skills sharp and it is not serious money.
