If you mess w/ tomatillo salsa, I recommend a guac tomatillo crema with finely diced chipotle peppers. Similar recipe and effortlessly fuses a mild green salsa with a thick sweet mole

My friend made chicken mole (Adam Ragusea’s abbreviated version of mole sauce) a couple of nights ago. We had leftovers, so I offered to make tacos. I had picked up two ready-to-eat avocados; I decided to make guacamole. Wish I’d had this recipe last night. Too much Persian lime oil spilled in (should have paid more attention). Adding grated Parmesan helped, but I’ll try your recipe next time. (The tacos turned out ok, if a bit messy, but I’ve made better.)

Yes we have great avocados here, in fact I could even grow my own in this climate, but it takes around 7 years I believe for a tree to fruit, never had the patience.

Thank you. No garlic. You want to have more avocado taste. Not too much lime juice. If, like in Mexico, you use white onion, it always needs to be rinsed after chopping. That's for any dish. Basically, guacamole is avocado forward with a little of the other ingredients: salt, lime juice, tomato, onion, chili pepper, and cilantro. Sweet mangos can be used in a pinch as a substitute if sweet tomatoes are not available.

Came for the guacamole, subscribed when I saw that I'm not the only one who loves the combo of guac and sweet potatoes. I cook mine similar to yours and serve with a simple cheese omelet with the guac spread on top. It's just 🤌🤌🤌
