The toor daal & bhaat my mum used to serve me in sixties when i was 4-5 ..that taste brings back memories.. (even today on 17th December).. my birthday & i’ve turned 62 ..& so i have to make that particular daal ..& it always turns out like her’s.. with ghee in the bhaat after it’s cooked .. lots of love to you from London England 🏴

Thanks Kunal, Few of these steps I would do differently to maximize nutrition retention of Spinach. 1.\ Never chop Spinach (or leafy vegetables in general) into small pieces as they loose nutrition value easily while cooking. Just cut of the bottom shoots and cut into 2 halves maximum instead, never finely chop. Most of the cuisines around the world prefer raw spinach for this reason. 2.\ Never put Spinach in the Tadka directly. Instead blanche the spinach separately in warm water and then add them separately to the dal along with the tadka. The blanched water is rich with nutrition from Spinach too, so could be added to dal later for consistency. 3.\ There is a theory that Tomatoes and Spinach should not be cooked together as this "specific" combination is not healthy. Traditionally in many households either we go for ONLY Tomato dal or we go for ONLY Spinach dal instead. Just thought of sharing this here as dal is so common and popular recipe across India.

Why can't we add chopped palak and tomato along with dals and whistle ? I think it's better
Palak will overcook and lose its colour in pressure cooker. It is better to cook it in the pan until it wilts a little and is tender to chew. 😊
