Another Wow for a recipe by Scott. I let the chicken marinate in the fridge for about 2 hours when I opened the container the aroma of the marinade filled the kitchen. As always have all your ingredients ready to hand. This is another very easy to put together recipe. And boy it certainly didn’t disappoint the taste and tenderness of the chicken was delicious. Another favourite from Scott going to be on a regular recipe list.
I've made different versions of diet coke chicken over the years, but this was by far the tastiest! Highly recommend adding some babycorn, sugarsnap peas and red peppers to the dish too 😋🤩
I’ve been making this for years (using different spices and passata instead of ketchup), it’s such an underrated dish and tastes amazing. I bulk it up with mushrooms, baby corn and mangetout. Can’t wait to give this recipe a try.
I use chinese 5 spice as well as garlic powder but fry of the chicken first and set aside. I then put a spray of oil back in the pan add the spices, some grated ginger the soy sauce 3 tablespoons of tomata puree or u can use ketchup. Warm this through add 2 sliced peppers then the diet coke and reduce it down, once thicken add the chicken back in and heat through. Serve with rice or noodles. You can add water chestnuts to the chicken about 5 mins before you serve.
I'm looking at this and other recipes that use cola soda because someone gifted me 2 bottles of really sweet effervescent red wine and I don't want to throw them away. The soda chicken recipes may be a way for me to use the wine, as they are way too sweet to drink!!!
I made this in the morning up to the point of pouring sauce over and finished it off this evening. It worked perfectly .
