I have never had a rancid jar of any kind of broth because I didn't skim off all the fats.
Hi, Carol-- I never remove the fat from broth that I make fresh or freeze. But canning broth is new for me. I took a lot of good information from this article: eatbeautiful.net/how-make-bone-broth-avoid-rancid-fat/ ...but the Homesteading Family, and PennState Extension both warn about the potential of canned fats going rancid or causing other problems with canning. But this video was just meant to share what I am doing--I'm not trying to tell others how to do things. So you keep doing what works for you and your family and homestead:-)
Yes! Check out my next video--one of the jars didn't seal so I used it to make chili in this video. I had it in the fridge until using it and it came plopping out of the jar like pudding!
