Usually just a dry rub and some smoke but I just started glazing em with kosmos q cherry apple habanero rib glaze, 🔥. Tough to beat
Also I started finishing the wings in the fryer to crisp em up, then hit em with kosmos glaze
Full wings! Love a good dry rub... But lemon pepper & buffalo mix is my favorite!

Awesome vid. Looks great. I use this funnel type thing in the center of my kettle grill and fill it with coals and then cook the wings in a circle around it. Seems like a very similar principle; indirect heat for the cook and then a quick sear/crisp over the coals.
Loved the recipe. I'll give it a shot soon!

My favorite lately has been a dry rub and then cooked at 300 degrees + on the top shelf of my workhorse pits 1975. Taste almost deep fried they are so crispy. I like to cook the whole wing for this.

That’s a South Carolina sauce it’s mustard base. Typically when you say Carolina style it means eastern Carolina or Lexington style, both North Carolina. Add either cornstarch or baking powder to the chicken or rub. You can tell the difference in the skin. Also try pricking holes in the skin before you put them in the fridge or before you put them on the grill. It allows the fat to render out and he skin to crisp up better. And trying using a vortex, it really forces the hot air up, really good for wings.

Going to give theses a try. Never tried them siting overnight seasoned. ….. You didn’t give feedback on the Fogo Briquettes?? … seems like you may have gotten a longer burn being is you thought you would need to add but you did not. Interested in your thoughts on them.

Perfect timing, Joe! I'm doing a batch of wings for a party on Saturday and I've definitely picked up a couple of tips from your vid. I never considered doing the dry brine/seasoning the day before, placing on the wire rack and leaving them in the fridge over night. I'm going to have to search for your rub recipe as you've added a few things I never thought to add to the mix. Love your channel and vids - keep on smoking :)

Hey Joe. I am 60 years young. For A Favorite. Well I was Born in Buffalo NY and Still live about 30 miles east of Buffalo NY so that pretty much covers my favorite Wings. ( and Pizza and Roast Beef ETC. but that's a totally new video). You Got my attention with this dry rub recipe. I like the flavor profile and it pretty simple. looks like next time at the store need to pick up a thing or two and fire up my 22" Kettle. Thanks for sharing!!

Also, I used those Fogo briquettes last weekend and I LOVE them! In my 26" kettle (not SNS 😉) , I used as much as I would of the Kingsxxxx brand, and it was way too much...these burn hotter & longer that the others, and I only needed half the amount of briquettes for indirect cooking some steaks.

I've been dry brining, uncovered in the fridge for years. It's the easiest method to get crispy chicken skin. Works on wings, quarters, whole chickens, and even turkey. I use this method on spatchcocked turkeys several times during the year.

Great job on the sauce. That is pretty much how I make mine, except I use red pepper flakes instead of Cayenne Pepper. That's how my uncle taught me. That is eastern, SC. Now I live in Western, SC, near the Georgia line and they are all about mustard based sauce. It is good on wings but not on pulled pork, at least not for me.. To each is own... Anyhow, great video, thanks for sharing... looking to see what you do next!

that 1 day prep is a must for any non fried wing, if you dont have time to do a whole day to let that salt dry them out, i also find getting a fan to help the circulation speeds it up dramatically. im only able to do this in the winter when the garage is freezing cold and i can put a box fan on them, but the skin tightens up in hours.
I get why you called it a smoked wing, but definitely wasnt the cook style i was expecting based on the title. smoking wings is definitely a challenge that i havent figured out. hot and fast is the only way to go.

Hey Joe, only issue I have is quantity, I want see this done on a bigger scale, Kettle's , that portion for 2 maybe but with a large family, you have to be in front of that small space for to long! easy to perfect something small amounts but still like the content. Thats my challenge to you, use the 250, FYI I just bought your exact primitive pit 250 but with a trailer.
You can definitely replicate this. After smoking it on the 250, move your coals to the grill and use the entire grill space to get them crispy. The only problem you might run into is fridge space to dry out the chicken skin.

Several years ago I went to BWW for the first time. I couldn't believe how people were scarfing down the worst wings I've ever had. A few years later I went to Wing Stop for the first time. It just reinforced my belief that wings ARE BEST MADE AT HOME... Along with most other things. Wire racks are essential. A small battery powered fan doesn't hurt either.

Lemon Pepper is a great wing flavor BUT I've never had a good one at a restaurant. They're never Lemony or Peppery enough. Only at home or at a friends house.
