I can tell you as a CT creator, you don't hit all of the key checkpoints to make an ultra shortcut work, you only hit checkpoint 0 (AKA the finish line), get out of it without unloading the last KCP or crossing the last CP (crossing last CP removes a lap, unloading last KCP makes the ultra cut not work) and then hit the last KCP, then driving forward. There are some other minor details to make it work but those are the general requirements for an ultra shortcut (and I made very sure that they are not possible on my tracks, either by making it impossible to keep the last KCP loaded on Two Dogs, or making use of the max shortcut size limit on Irsu Circuit)

I dont think that the first bowser's castle's shortcut is considered as an ultra as it doesn't skip any key check points
you're right that it doesn't skip any key checkpoints, but when the shortcut was first found people called it the ultra which has stuck until today
