Really like your work, should think about ordering your plate steel pre-cut in the sizes of your most common smokers, that way you don't have to spend all the extra time making a bunch of cuts, probably save you a bunch of time and labor costs. More profitable that way. Just an opinion is all.

What thickness of metal would you use to build the walls and does raised expanded mesh work or should I use flattened if I can find it?

Love that kind of work. Squaring it up is so important. And good tacks so it want warp. Thank goodness carbon steel isn't so bad. Great job as always.
