Strawberry Glaze Pie
1 PIE CRUST
2 LB STRAWBERRIES (CLEAN AND DRY)
Prebake crust 25 minutes at 350 degrees or until golden brown. Remove stems from strawberries and chop into ¾” pieces, saving a few for garnish.
Glaze:
1 CUP STRAWBERRIES
1/2 CUP SUGAR
3/4 CUP WATER
4 TBSP. CORNSTARCH
1 TSP. CORNSTARCH
1 CUP SUGAR
10 DROPS RED FOOD COLORING
1 TSP. VANILLA FLAVORING (OPTIONAL)
Blend strawberries and sugar in the blender or with a stick blender. This is your strawberry puree. Whisk together water, cornstarch, sugar. Add strawberry puree. Microwave in a glass bowl for 2 minutes. Remove from microwave safely and whisk well making sure to mix cornstarch that may have settled to bottom of bowl. Place back in microwave and cook on high for another 2 minutes or until it is a thick glaze. Whisk in vanilla and food coloring.
CHILL GLAZE BEFORE ADDING TO PIE! Put strawberries into pre-baked shell and pour CHILLED glaze over them. Garnish with whipping cream or cool whip and extra strawberries. Keep refrigerated until serving.

I have lived in the Seattle area a long time, but I am from Georgia too. Loved this pie. Had it from Shoney’s and homemade. Yum. I still cook a lot of down home stuff. Made a huge pot of Brunswick stew and cornbread to go with it about a week ago. I share with family,friends and neighbors.
But, I am so sorry to hear about your mama. And Christmas Day, especially sad. Take care of yourselves and each other. 🙏

So sorry you lost your mother on Christmas Day.
I find it easier to keep the strawberry chunks in the fridge. When the glaze is done, I dump the cold strawberries in the hot glaze and fold. Then into the pie shell. The cold strawberries helps cool the glaze, the filling will stick to the crust for easier eating and there is an even distribution of the glaze. Yes, you can not have too much glaze.

I remember eating at Shoney's Big Boy when i was a girl. The strawberry pie was delicious. And I totally agree with your Mom and grandmothers. I also use store bought crust. It's so much quicker and less stressful.
I was actually looking for a strawberry pie filling recipe to use over the cheesecake I made. Started watching your video and realized I could just give it a southern tweak and it would work. You know its really hard for a southern girl to follow any recipe exactly! 😉 Since its the wrong time of year to get good tasting fresh strawberries, I used frozen. Made my glaze, cooked it on the stovetop, then added the rest of the sliced frozen strawberries to the glaze while it was hot. Hubby, my official taste taster, said it tasted delicious! 😋 It's cooling now and once it's chilled, we'll be able to put it on top of the cheesecake slices. Thanks so much for your video!

We make four slices out of each pie and usuallly eat the whole thing. We've tried it with a store bought graham cracker crust, too. Pretty good!

THANK YOU for this. I made it just now and it is a fabulous recipe. I did everything as you said with the only exception being I mixed the glaze with the strawberries in a separate bowl before pouring into the pie crust. My pie crust was not as nice as yours but sure was good! Thanks again for sharing and explaining so well.
