Quesitos were one of the treats I missed most when we moved back to the mainland after 5 years living in San Juan. In those pre-internet days I too had to figure it out for myself. They've become a staple Christmas morning treat in our household. I always use honey for the glaze because that's what I remember from my favorite panaderia. When I'm feeling fancy I add the zest of about half an orange and muddle it with the sugar that goes with the cream cheese. It gives a great little lift to the flavor and goes especially well if you can get orange blossom honey for the glaze.
@@SenseandEdibility Marta, I tried your puff pastry recipe and quesito assembly method for Christmas morning and it was so much easier than what I have been doing for the last 10 years!. Previously I mixed the sugar and zest into the cream cheese and piped it onto 14"x4" pieces of puff pastry. I had 0 blow-outs with great flavor and texture. They were definitely my best quesitos yet. Thanks again!

This looks delicious! I'm hooked too. I had them at Zoe's in Aguadilla, had them a couple other places but went back to Zoe's because hers was the BEST! I think if I was trying to cut down on the sugar, I'd cut down on the sugar INSIDE, not the glaze.
@SenseandEdibility okay, I wouldn't cut down on any of it myself, but the sugar outside gives such a great texture and contrast. And I really liked that the cheese was a little tart, and contrasted the sugary outside. Idk, it was such a beautiful combination of tastes and textures. I wouldn't change a thing, but if I HAD to cut down on sugar, it wouldn't be the outside.
Okay, I can't be mad at her for wanting quesitos. But more importantly, did you just say "Jesus be a Xanax?" 🤣🤣🤣 I love my people 🇵🇷✊

The glaze has more sugar than the small amount added to the filling, but it's a personal preference.

It depends on how sweet your sweet tooth is, but I usually leave it out because the guava paste is sweet enough for us.
