I have a Mandolin that has a waffle fry cutter. They make them on the thin side.
I tried making sweet potato chips with it. They turned out better than I thought they would.

Buy an anti-cut glove if you use a mandolin slicer without the holder attachment. I was extremely careful with my mandolin slicer but one day I slipped and severed my thumb. It was quite the scene. Buy the glove.

Thank you for this reminder. I have a set of gloves, and I always forget them. I literally just read your comment and immediately walked to the kitchen and put the glove on top of the mandolin. That's where I'll keep it now.
I cut myself just taking it out of the box so now I'm very wary of my mandolin

I think that's a good thing really. It's nice to watch a professionally trained chef whip up some amazing meal like it's a breeze, but watching a home cook is better because shows me what's actually realistic for me to try.
The correct thing would be to say she’s not a classically trained cook. She is professional. She’s paid by RUclips and sponsors to cook these things. Pro cook by definition. She’s pretty dang good at it too if you ask me

Years ago I worked at a factory here in Australia which made Chips and Extrusions. Occasionally there would be chips ( or crisps whatever country you’re from) that would come out puffed up. Just potato cooked in really hot oil. The problem with some of those puffed up chips was they were very oily. And back then because they didn’t look “right” those puffed up chips would be taken off the belt ( chips had to travel along on a belt after being cooked to eventually ending up at the chip packaging machine) and thrown into a bin ( which was kinda ridiculous as they tasted like all the other chips) For years after I left that job I couldn’t eat potato chips/crisps, no matter the use by date on the packet, because they didn’t taste as fresh as just taking one just cooked and seasoned off the belt to eat. And now days I tend to gravitate to sweet potato chips/crisps rather than the humble white spud chip/crisp........ I write this, cause this post reminded me of that time in my life........... ⚛️☮️ 🥔 🌏

I used to love touring herrs potato chip factory for the same reasons
As I remember it in the Jacques & Julia demonstration, they had similar results in the number of potato slices that puffed. Jacques explained that you kept the puffed ones and discarded the non puffers. Then, fried the puffers for service. The non puffers probably went to family meal.
I'm getting older and I could have imagined at least part of this. It was 30? years ago.

I was thinking lightly beat the egg white with a pinch of salt-the salt helps the cell walls to break down a bit, resulting in a looser egg write
Or whisk in a spoonful of cornstarch and reduce a step.

Props to you, bassoon is freaking hard! Lol this is coming from someone who could proficiently play trumpet, French horn, trombone, baritone, clarinet, alto and tenor saxophone, and flute through college. Music was my life! But I just never could manage string instruments or double reeds lol
I wonder if you could add some sort of seasoning between the two layers, to spice it up and make it different. Without effecting the steam reaction that you need on the inside to make it pouf up. Love your videos Emmy, been watching forever!

When I was a kid we fought over the bubble chips too, we called them bird houses or bird nests, so if they were cracked already the birds had escaped. Silly kids

The filter when you spilled the egg white was so funny!
You can separate egg whites & yolks using the shells. Also shells attract shell fragments that may fall into the white. No hand is pristinely clean.

There is a Puerto Rican food called arepa that works with this puffy middle concept but it utilizes dough made with flour. The best ones are tiny ones in my opinion but people also make them quite large especially in street food settings. There are regular variations and coconut. They taste really good when done right.

My mom found that you can separate egg whites just by letting them dribble out of the shell. Of course, her nails are like claws in terms of hardness, so she would likely risk piercing the yolk if she tried to do it with her hands. But letting them dribble out the bottom of the shell into a bowl does work.
We called these Potato soufflés, they are addictive!!
Anything involving potatoes is automatically a hit for me. 😊

My favorite chips in any bag are always the puffed up ones. I wonder if there's a simpler way to get puffy chips without this much work. It's always a happy accident so there must be an easier way to get them.
They won't be as chip-like, but if you're seeking crunch, I've seen people place just medium thick potato slices on a wire rack in the stove for half an hour (someone said 425°F?). They puff up still
Theres a puffed snack here in ireland called munchos very similar to this style and deliciously good but are in semi circle
I like the thinness of like regular classic lays chips and love when I get a chip with a bubble inside. I like that they're crunchy but not real thick. I may would like the snacks y'all speak of if they're not very thick.

There used to be some crisps like this in the UK when I was younger, called Potato Puffs, I loved them... The crunch as you bit into one was amazing, well worth the risk of one exploding and getting a potato shard stab to the gums...
