Based on looking at endless hours of Food Network shows, I think you might improve on the recipe by using 16 oz of cream cheese to give it more of that flavor and less of the wetness that you were talking about. I think letting it set after taking it out of the oven to cool to room temperature and then putting it in the refrigerator for at least 4 hours would help with the texture. If you don''t like your cheesecake served chill, you can always cut servings and set them on the kitchen counter or table for 30 minutes before serving. Personally, I like a little chill on my cheesecake. I do like your crushed lemon biscotti as the crust. That's a nice twist from Graham Crackers. Lastly, I think 1/8 teaspoon of salt (a dash of salt) added to the cheesecake batter would help cut through all that sweetness. Just my two cents.
Please keep the videos coming. I'd be interested in your meal preparations for dinner. As you both seem opinionated about what you eat, perhaps an occasional date night restaurant review & what you both eat on "cheat days". You both look fabulously fit & are very handsome but I know you've got to be human & eat "guilty foods" like potato chips or Cheez-Its (my favorites) once in a blue moon.
